Post by: Slice of Health on March 15, 2016, 07:39:24 am
This is a versatile recipe that you can make your own, use the base recipe then add in your choice of extra's to make it a meal which can be different each time.

Makes: 2 as a meal, 4 as a side

INGREDIENTS

Base Salad:

100g carrot, sliced into 3cm disks
80g kale (removed from main vein)
    1/2 orange, flesh only
    10g (1 tbsp) tamari
2 tsp lemon or lime juice
    20g (1 tbsp) olive oil
Fresh basil or other fresh herbs of choice

Optional Extras:

Chopped cherry tomatoes, cucumber or other veg
Cooked rice, quinoa or your favourite whole grain
    Feta or parmesan cheese
Sliced boiled egg or cold meat
    Seeds
    Nuts

METHOD

Add all base salad ingredients to Thermomix : 2-4 sec, speed 5
Serve with any optional extra's either stirred through the salad and/or arranged on top
Refrigerate or keep in a cooler bag until ready to serve

Its sounds lovely SliceofHealth, I am in love with kale lately and have been having a lot of it as baked kale chips but never have tasted it raw. I am sure it would taste wonderful, thanks for sharing this easy recipe :)

I like the look of this one too.  I had kale in my salad today and I always use it in my green juices each day.  :)

It certainly looks colourful Eva. I've yet to convert myself to the taste of Kale.

Thanks so much all  8)

Thermilover I love kale chips too, I normally find it a bit rough in texture raw, but Thermomix fixes that of course. Also great as a 'hand massaged' salad, you literally massage the leaves with dressing and it's really nice.

Cookie, have you tried it steamed? That's the probably easiest way to start with kale, it's sort of like spinach.

Cookie, if you can get this somewhere near your place, please try "Loving Earth Kale Chips", it comes in different flavors, red, purple and yellow, red being my favv. They are yummmm and surprisingly very filling. I fell in love with Kale after eating these chips and from then have been trying to make different variations at home. Even my fussy little DD loves it :)

I just had a bowl of Pumpkin & Kale Soup. I just use the basic Pumpkin soup recipe from EDC, cook for 18 mins then add washed, (stems removed) chopped Kale.I usually use 1/3 to 1/2 bunch depending on size. Cook for the remaining 2 mins as per original soup recipe. Purée.
We are trying to get more Kale in our diet, especially after reading the 2 books I bought in Melbourne recently. Kale is so very good for us.
