Title: Mango / Orange Nectar without Foam
Post by: isi on January 12, 2010, 10:50:57 pm
Hello!

What disliked me earlier when I made the natural juices in TMX was the foam that formed and makes me really huge impression!
But some time ago I attended a small course TMX where was made this Nectar WITHOUT FOAM!!!!
I now know the Secret !!!!!!!!! :D  -  OK it's no secret but I just didn't.t knew - hehehe
Centrifuge with ice and then add water.
Now I kill all kind of fruit in my TMX  ;)

MANGO / ORANGE NECTAR
(http://i470.photobucket.com/albums/rr64/melgaco/DSC_0185.jpg)

3 Shelled Oranges
1-2 Shelled Mango
1 / 2 Peeled Lemon without the white
50 gramm Sugar (when the oranges are very sweet I  put none)
2 to 3 good handfuls of ice (to prevent the foam over the nectar)
1 / 2 l Water

Place all ingredients except the water in the Thermomix! - Program  2 minutes - 9 Speed (LOUD!!)
After this time put the Water and 15 seconds at the same speed!

Let 'Drink this vitamin every day to REFRESH - because I saw what is going on in your Country  :o :o :o
Bye
isi

People in our shire are getting into trouble for throwing them in their green wheelie bins. It makes the bin too heavy for council to pick up. 1 bin was 150kg!! Think of all the chutney!  :o

No need to apologise - I normally don't get home to see the news - but nearly cried when I saw all those mangoes going in wheelie bins.

Had to laugh - the council put a ban on anything over ? 70kg ? and sent out recipes for mango chutney !!  How much mango chutney would people get through in a year?

Thinking about it - they ferment and get smelly pretty quickly - which is why poor Sandy (Interpidtrier) had problems bottling the buggers.

We had a big mango glut, So I spent a few hours freezing them, well worth it as I will now have mango on hand all year.

First cut cheeks off mango, and use icecream scoop to scoop out flesh, freeze 4 cheeks per snaplock bag.

then peel skin off the rest of the mango and use the scoop to scrap all the flesh into a big bowl, once the bowl is full you can ladle mango mush into individual snaplock bags and freeze. The mush is fantastic for smoothies, nectar, sorbets, sauces, jam etc etc.

It is well worth the effort and I just couldn't bear to see my mangos rot on the ground!!!

Next year I am going to use my TM to do up heaps of delicious mango jam!!!! (had it a bit late this year!)

I just made half of this recipe Isi which made a large jugful - very nice and smooth. Wasn't sure if the last ingredient read 1/2  litre water but the mixture was quite thick before this addition so I figured it was correct. Thanks for the posting.

I made this today as I had oranges I needed to use up in my fridge.  I had frozen mango in my freezer.  No lemons but I used half a lime instead.

Absolutely beautiful, thank you Isi
