Hope to make a few "experiments" today to try out in anticipation of the visit of our friend who is on the no grain no sugar diet - an eggplant and tomato bake, a cottage pie and a raw strawberry macadamia cheesecake.  I probably won't get through it all, but those are the plans for the day.  Also found from frozen pineapple and bananas in the freezer so will throw them into the TMX with some fresh mint and a mango that needs to be used up and see what sort of smoothie I end up with.

Michele, no wonder you were tired.
Marina, that all sounds interesting. Bit of a challenge there.
I'm not cooking anything except stock from the turkey. Too hot to even think about cooking.

You poor folks with the heat. I'll try to send some cool weather over.

I'm going to make some bread this afternoon. I'll do one of the 'in the casserole' loaves.

I've just marinated some chicken fillets - a very old recipe from WW bbq cookbook. They are for tomorrow night. We head off to Armidale tomorrow and I want dinner organised. Will bbq and serve with salad and chips. This was a DH request. He asked for 50/50 meat and vegetarian meals while we are away. I bought organic, free range fillets, hope they are cruelty free too.

Making stock from chicken and turkey bones.
Have harvested garlic and will make into paste in TMX and freeze in small plastic bags.
Still eating ham. Lots of salad from garden.

I roll them straight out of the oven while hot, then fill and re roll.

Used some of the stock to make mushroom and prawn risotto.
Made 40 SD crumpets.most to give away. The SD took a whole day to freshen up. The crumpets took 8 cups of SD.
Ham sandwiches, some with pineapple others with Beetroot and orange chutney.

Having a few friends around today but just keeping the food simple, green salad, beetroot pomegranate and pistachio salad, quiche, curried eggs, garlic and herb bread and Eton Mess and will buy some cold cuts for those who eat meat.

I have my brother from ACT coming to dinner tonight. We are having one of Tenina's recipes, Pumpkin, Ricotta and Spinach Pasta Bake. I'm not using ricotta, but made some of Tenina's Quesco Fresco cheese to use instead. Both he and his wife have Type 2 so it won't hurt them to have a vegetarian meal. I'm still thinking about dessert.

Another lot of visitors coming today!  I'm a bit stumped as to what to make as he is a very picky eater - I guess it's off to the supermarket today for more cold cuts (he's a dedicated carnivore).  I might get away with a potato salad but I don't think a green salad would be appreciated!  I am off to put my thinking cap on and to scour all my recipes.
