Title: Fig Jam

Fig Jam (Bet this is really nice!) makes 1 kilo

1 kilo figs (cleaned)
600g sugar
1 tablespoon lemon juice

Place figs and lemon juice and chop 4 seconds speed 4.
Add sugar and program 30 mins, 100º, speed 2.

It was very common in the 'old days' for people to have fig trees it seems.  I hated figs until a year ago when for some reason I decided to buy a few lovely looking fresh ones and was hooked.  Now, no-one has a fig tree  :( :( :(

Do you buy figs just at your local supermarket here in Australia?  Never seen them, never eaten them, but once tried fig jam and.....I WANT MORE!   ;D

More likely to find them in greengrocers run by Italians - or at markets.

We visited the place we used to get our figs from the other day and they haven't been watering them so the first crop are so shrivelled and yucky. No figs for us this year. :'( :'(

i have a heap of dried figs, could i soak them to use? and if so for how long?

Certainly can - just soak a few hours (or overnight).  You may be able to cut down on the sugar too,

I have a huge amount of figs given to me b a colleague they are the green ones, do I use the whole fruit or peel them?? The skins are very soft.

yummy. GHM use the whole fruit.  Fig and Ginger is delic. Make sure you use plenty of lemon juice as figs are low in pectin.

thank you.  Shame it is 7:30 and I have no lemons will have to put off for another da. How much ginger would you suggest adding to the EDC fig recipe?
