Thought this deserved its own thread so others will see it


Pumpkin Hummus
2 tablespoons tahini
2 tablespoons fresh-squeezed lemon juice
1 teaspoon Thai Curry paste or Cumin seeds
1 teaspoon olive oil
3/4 teaspoon salt
1 1/2 cups mashed pumpkin (very yummy with left over roast pumpkin)
1 garlic clove, chopped
2 tablespoons chopped fresh flat-leaf parsley

1 tablespoon pumpkin seed kernels (pepitas), dry roasted in TM (optional to sprinkle on top)

Place all ingredients, except pepitas, in TM for about 30 seconds  speed 4

Serve with toasted pita bread.

Thanks thermomixer, I will just put up in new topic next time, so you don't have to move them.  I thought I would put this one up my daughter is making it now to take to a bbq, along with herb and garlic dip, marinated TM yogurt cheese (strained yogurt cut into squares and marinated in olive oil with fresh garlic, sundried tomato and basil) and crakers all made this morning by her she is 16.  And I have just taken the focaccia I made out of the oven. What fun for the school holidays food made and shared with love.

Yes Cooki,e the marinated cheese is a real favourite with friends and great to give in a christmas hamper as a gift, Drain the yogurt in a chux lined sieve over night turn onto paper towel and put in fridge for a few hours for the best result.
I noticed that Clsea put a similar recipe  Labneh at http://www.forumthermomix.com/index.php?topic=1893.0

Then alternate with the garlic, basil, sundried tomato, olives and cheese.  Fill jar with olive oil last for about 2 weeks so yum with crackers or in a salad.
Or
If you add herbs or dried fruit to the drained cheese you get a sweet cheese like you buy in the supermarket shape into a log or patti and cover with nuts, coconut or hers.

My mouth is watering. I have made yoghurt cheese, or actually paneer. I guess I could marinate that. I don't think it would last too long in this house. We are cheese freaks.
