Hot today, smoked salmon and prawn  salad. I’m finding the fruit vinegars a lovely light dressing.

Last night I made a sausage pasta dish.  Squeezed out the filling from 2 thick Italian sausages, made into meat balls and fried them with Zuchinni and eggplant, tipped over a tin of crushed tomatoes.  Served over pasta that had Parmesan stirred through.

Judy, I was thinking of you today when I made a rather nice veggie soup. Used the core from a Cauli and then added lots of other veggies that needed using up.
Tonight, leftovers, chicken , mushroom tray bake.

Judy I plan to make your latest soup for tonight’s dinner. It is lovely and cool.

Judy your soup is really lovely. I loved the creaminess from the cashews. We all loved it and we have enough for tonight as well.
