HI everyone,
I would like to make enchiladas and can't find corn tortillas in the supermarket without buying a dinner kit. Does anyone have a recipe for making your own corn tortillas?

Here's (http://www.forumthermomix.com/index.php?topic=3121.0) a thread with different recipes for tortilla recipes Dashingden. For corn would you just replace the flour with masa flour? I can't specifically find one for TMX for corn but I hope this helps.

:D :D Marina it is only our wedding anniversary - 24 years which is a pretty good achievement considering our circumstances. We had booked 2 nights in the city to celebrate but due to DH's ill health, had to cancel at the last minute. We were able to go out to lunch yesterday though as he was feeling better and we are going to be doing the same thing today to make up for our lost weekend. Looking forward to reaching the first big milestone in marriage next year.

24 years and no trade in on a new model - I call that a superb achievement. Happy Anniversary and sorry that your plans for a break away went awry, that would be disappointing for you both as I should image you were both looking forward to it and there would be so much organising to be done in advance when you take Geoff away for more than a couple of hours. Hope your lunches went some way toward making up for everything.

I'd try a health food shop first Vivaroo then perhaps an Indian shop if Woolies/Coles didn't have it. I've never seen it but then again, I've never looked for it either ;)

Wasn't any in the Woolies and I looked in the health, mexican & flour sections; so I bought corn tortillas and made quesadillas for tea. Who am I kidding that I'll suddenly make tortillas on a normal weeknight, I even bought the refried beans which I usually make, which reminds me, I've never seen pinto beans ever, yet every mexican recipe uses them. I did buy some polenta, ingredients: maize. I'm going to see that will turn into flour?
