I came across this curried pumpkin and lentil soup recipe on taste.com and when I read all of the wonderful reviews I just had to try it. I must say it is one of the best pumpkin soups I have ever tasted and so ridiculously easy. Seriously thick and yummy!!!

Curried Pumpkin and Lentil Soup

Ingredients:

1/2 onion, peeled and halved
1 clove garlic, peeled
40g organic olive oil
1 teaspoon curry powder (or to taste)
700g butternut pumpkin, peeled, seeds removed, and roughly chopped
100g dried red lentils
620g vegetable stock (600g water and 1 tbsp stock concentrate)
natural yoghurt, to serve

Method:

Add onion and garlic to TMX bowl and chop for 3 seconds on speed 5. Scrape down sides.

Add oil and sauté for 3 minutes at 100 degrees, reverse speed 1, adding the curry powder in the last minute.

Add the pumpkin and chop for 8 seconds on speed 5. Scrape down sides.

Add the lentils and stock and cook for 20 minutes at 100 degrees on reverse soft speed.

Blend for 20 seconds gradually moving the dial up to speed 9.

Serve with a dollop of natural yoghurt.

Tip:

I like my soups quite thick.  Add extra water if you prefer a thinner consistency.

We love it with sweet potato instead of the pumpkin too.

Tips/Hints from members Delicious recipe

JulieO - The only tweak I did was to fry off the onion in a frypan and add the curry powder, then scraped them into the TM bowl after chopping the pumpkin.  I think I will even try using a whole onion next time too. I did add a little extra water at the end.

CC - Did the method a little differently. Ground the lentils first 30sec/speed 8 set them aside. Used butter instead of EVOO and substituted chicken stock. Didn't use soft speed but cooked everything at speed 2.  

JD - I roasted the pumpkin and 2 cloves confit of garlic (using the oil as well) in the air fryer for 15 minutes in a preheated 200o air fryer (I removed the basket and placed the pumpkin pieces onto baking paper in the bottom of the machine).  Whilst this was happening I chopped and sauteed the onion in more garlic oil in the TMX then followed the rest of the recipe, cooking it on speed 2 though.  After blending, I added 120 mls cream and mixed that for a few seconds.

We love it with sweet potato instead of the pumpkin too. We like our soup thick so add a little extra water if you don't like your spoon standing up in your bowl!!!

My DD 20 months is LOVING soup (or suit as she calls it) at the moment. She wakes up from her mid day sleep saying "suit, suit" and running to the highchair.  Will give this one a go today.  Would it matter which colour lentils are used?

So cute bitTcup.  Red lentils are best because they break down and the pumpkin is the real star of this soup.  If you use brown lentils you will have to cook it 20 minutes more I believe.  I'd pop out to the shops and get the red (orange really) lentils.

This was just what we needed last night. I asked DH which he preferred Thai Sweet Potato Soup of Curried Pumpkin with lentils. He chose the pumpkin so the other will be another night. We love nice thick soup, thanks Chelsea. :-*

I am praying this soup is very forgiving.  After hearing me growling that I had forgotten to thaw meat my boys were desperate for take-aways tonight.  I nearly gave in as I haven't been well but decided that we probably needed something nourishing and thought of this.  After discovering we were out of onions I got the torch and went out in the dark to find a leek in the garden.  Then after discovering one of my sweet potatoes was rotten I had to use a combination of sweet potato, carrot and potato.  I just hope it will taste ok when it is finished cooking!!!

Thanks JD.  It's just a cough but it's knocking me around a bit. The soup wasn't great but was edible with some crusty bread and lot's of cracked pepper.  ;) ;D

I made this soup last night and I loved it. It is quite thick (which I prefer). I only put a teaspoon of curry in but could had more if you wanted it. I was thinking some other spices might go well in it too. I will def be making this one again!!

 :D Thanks girls, yes it's with the new camera and it is a learning curve but I'm enjoying it.  

Judy I plan on taking it the next time we visit our grandson, was going to drive down today but DH is full of a cold and didn't want to risk passing it on, so will have to wait until his next days off (and I have no jury duty to get in the way).  ;D

That's fantastic.  I must admit it is one of our favourite soups.  I make it at least once a fortnight with either butternut pumpkin or sweet potato. Yum!

I want to make this for my mum for lunch tomorrow as she is only able to eat soup following an operation recently. The soup must be very smooth, so for those who have made it before, can you please advise if this is the case or if I should follow CornishCream's method and grind up the lentils first to be sure?

I didn't grind my lentils Kerryn and the soup turned out fine.  Nice and smooth.  If anything I think I was a little heavy handed on the curry powder but that was my fault.  I did use speed 2 on reverse tho.  Hope this helps you. :)

When you blend the soup the lentils aren't at all distinguishable, so no need to blend beforehand. It is quite a thick soup so add extra water if your Mum needs it thinner.

This is just what the doctor ordered for tonight as it is a tiny bit cool, under 30 anyway. We haven't had soup for ages and have missed it. I like iced soup but the rest of the family don't.

This was the first soup I made in my new TMX . It is absolutely delicious and very easy on the waistline .  Hubby loved it as well .  :)

I made this today after going through CP63 list of fav recipes, and served it with the cheese and bacon rolls also on her fav list.  This soup was lovely as were the rolls. And went down a treat as today in Adelaide, Australia it is cold wet and windy.

Delicious easy, quick soup.  Perfect for this cold, rainy, dark wintery day!  I had all the ingredients on hand which was a bonus.  My lentils didn't puree fully but I still love it.  Maybe I will try grinding them first as a previous poster suggested.  Will definitely be making this often!  Thank you.   :)

Quick and easy soup. I added extra water and cooked for an extra 5 minutes. Lentils take different times to cook and I wonder if people who found the finished soup gritty were using another type of lentil or needed to cook for longer. I found cooking on reverse speed spoon barely moved the mixture so I ended up using speed 2 without reverse (hey, it gets puréed anyway so why bother with reverse?) to get everything moving and cooking.

A yummy soup which will cover a week of work lunches.
