Yummo Judy.
We were booked to go to the Golf Club Bistro but cancelled as we couldn’t risk COVID which is still around strongly in Ballarat.
Roast chicken cooked in BBQ. tonight.
Our Weber BBQ is out in the open and I’ve found it’s a good place to place bread to rise.

Last night was Chicken & Vegetable pot pie with potato/sweet potato mash on top instead of pastry.
Tonight we had salmon, home made chips, peas &  carrots, sweet corn.

We had thin slices of chicken cooked in pastry with spinach, feta, Sundried tomatoes and pesto. DH did some veggies to go with it.

Last night grilled chops on BBQ in a dish with potatoes and tomato followed by a trifle of sorts. Tonight pizza. Last of trifle.

I love trifle, Drakes sell a simple one that satisfies me but I’m currently in the process of making RTE’s Christmas trifle to take to DD’s. Will post a picture when all the layers are finally finished in a day or two.

Another trifle lover here.  Mine on Xmas day will be fairly plain with berry filling, mango custard (instead of dairy) and pear and cashew cream topping.

Another trifle lover here too.  Marina I like the sound of your mango custard, is it one you created or is it from a recipe site.

This is the recipe Margaret.  I usually just grab a bottle of mango off the shelf in the supermarket and use as much as I like and I use soy milk.  http://www.cooks-notebook.com.au/2013/11/thermomix-mango-custard/  Everyone who has it has absolutely loves it - in fact, they didn't even realise it wasn't dairy custard until I told them.

Marina, Thanks for the recipe.  I love mangos and this sounds delicious.  Have you tried Chookies Mango Fluff, this is also delicious.

Not yet - but, like Judy, it is now in my "to do" list.  There are heaps of mangoes around just now so it would seem like a good time to make this.  Thanks for mentioning it.
