Did prep work for a Japanese soba noddle salad , made gravy for roast chicken . Salsa verde for the prawns . List for what to cook tomorrow.

We are having a cold lunch at DD. She has a an outdoor eating area under shade. I’ve cooked most of the food. Roast pork, Turkey and ham. Made garlic bread, dips and crudités. DD is making salads and DIL Fruit and Cake . I’ve bought a pavlova and will top it with cream and berries.
I bought 18 croissants from the French Patisserie in Creswick. I’ve shared them around to friends, neighbours and family. Made TMX custard for the Pud.

Sounds like a delicious lunch would have been had Chookie .
Pre lunch nibbles of smoked salmon blinis went down well for last minute drinks before lunch . We had for Christmas lunch , roast chicken with duck fat roast potatoes ( roast carrots did not survive the extra hour in the oven , due to unplanned prelunch drinks at friends ) blanched asparagus, ham ( honey mustard ) and fat prawns with salsa verde . Ice cream plum pudding . We then road tripped for DH and DS to see his DM in rehab hospital. Dinner at DH DB we at yes more food took the lovely soba noddle salad ham and ice cream plum pudding in a log shape .
Home 11.30 pm ! That was a full on Christmas Day ever ! Not bad for not plans three days before Christmas.

I've taken the idea and used my own recipes. I'm using Mab's recipe for the sponge, Tenina's for the hazelnut meringue and the recipe given for the cream to cement it all together. Just waiting for things to cool so that I can construct it.

That's an amazing looking creation, Cookie.  I am sure your version will be even more spectacular!

I spent the morning yesterday prepping for some friends coming for lunch - satay sauce, gado gado, potato salad, summer berry pudding with pear and cashew cream and lemon bliss balls.  All very easy, so everything was complete and ready for eating when friends arrived.

Today is another 'left overs'  day!

Had roasted duck legs and created a burnt orange sauce. Just singed a whole orange over gas flame. Chopped in pieces and mashed in TMX. Made into a thin jam with some spices . When cooked strained.
Also created an unusual trifle. Bought Swiss roll. Lined a crystal bowl. Used plenty of wine and filled with mango fluff. Topped with cream.
Loved to read what everyone was cooking. Some very special creating going on here. Cookie that plate with the ham looks extra yummy.

After I read this posting Chookie I realised that I had the ingredients to make this so I hopped to and did just that, only half serve but it was nice to use up the last of the frozen mango pieces, the yoghurt I didn’t know what to do with and the out of date packet of orange mango jelly crystals to create my dessert for the next 5 days.  I also had some frozen jam roll left over from my Christmas trifle but thought I’d just do the fluff today. I’ll keep that idea in my head though for another time.

Just scraping together the last odds and ends from the last couple of days of over-eating and making trifle to take to a friend's place for dinner tonight.

Hot here today.  Finishing the smoked Trout with salad.  Then AF chicken.
Yesterday cooked RAL some chip in the duck fat that came out of the legs I had cooked. Yes I did have a couple. 
Judy, the Mango Fluff recipe was converted from a Banana Fluff recipe on the Forum. Thought I might lightly cook some Apricots and try these.
Thought I might make ‘ Light Swedish Cheese Cake’ today. Top it with blueberries and raspberries.  ( From my Blog. )

Yes the banana one is on my ‘to do’ list Chookie as it’s a good way of getting yoghurt into my diet, I now find it too tart to eat unless it’s in with something sweet.

Cookie your sponge turned out beautifully and I bet it tastes as good as it looks.
