Help!!! What did I do wrong, Made this the first time using Clinkers, Turkish Delight, mini marshmallow and Pistchios, it worked beautifully,  ;)  tried again using mixed nuts and violet crumble instead of clinkers  but halfway through the mixture stopped melting and clumped up, I have tried to melt again over a bowl of boiling water but its not having any of it  :-[ such a waste if I can't rescue it, looks terrible but still tastes good, any ideas anyone ???

cant really help but may have dried out too much and may need some liquid to bring it back???? thats probably what I would do but depends what you mean by clumped up??  im sure johnro or one of the other girls will come by with comments..

At some stage, Kazza we all have a similar horror story when melting chocoolate - the chocolate has seized!! (I had exactly this conversation with my SIL during her visit last week!!!!) Either  moisture has got into your mixture, (whether that be in the form of steam or water spalshing) or the chocolate has got too hot and scorched. Adding water to melted chocolate has the same effect as adding water to flour  - it turns into a paste, the small amount of water acts as a kind of glue, wetting the sugar and cocoa particles just enough to make patches of syrup that stick the particles tog. If a bit of water accidentally gets splashed in your bowl, you can save the choc by adding cream and using it as a ganache or sauce, unfortunately you can kiss the rocky road or any such dish good bye and you will need to start over.

well there you go lol...you can tell im not a sweet tooth... and rarely temper chocolate...they do say you learn something every day  ;D  thanks robyn...info noted  :-))

 :-\ mmm I didn't add any water at all it was all mixing nicely in Thermie on the correct temp then all of a sudden it changed, the choc mixture now looks like gravelly mud!!! :-))
I wonder if perhaps the violet crumble had too much moisture in it??? Thanks for the help Frozzie and Johnro, I might try the cream, Merry Christmas  :-*

OMG fundj, that looks devine. I bought the ingredients today to make on Wednesday when I home. The local shop didn't have mini marshmallows only mega ones. SHould I cut them up with scissors or leave the whole?

I am too lazy to chop the clinkers by hand. Can't you just pulse them in the TMX?

You could try Lucy, keep an eye on them through the hole or you could end up with clinker powder.

Nigella freezes this recipe of hers Haybray but I find Rocky Road keeps well in a cool place.

I made a double batch of this as per the recipe although I melted the chocolate in the microwave and mixed it all up in a big bowl, I find it much easier this way.
