OMG ..... this Naughty Rocky Road is the absolute best - made it in my spare time today at work, sadly no camera and definitely no leftovers.  Would not dare mention to DH there has been a batch of Rocky Road made and he did not score a sample - never fear will make another batch at home very soon - stay posted lovelies.

Made a 2nd batch of this today.

This time I melted the chocolate in tm, then i poured it over the lollies & mixed myself. Yes the chocolate was easier to come out, but the tm mixture was all evenly coated with the chcolate, mine had the odd splash of colour coming through.

Having done both ways, next time i will do it all in the TM

Both batches in the pic below - the top pic shows the uncut section of the original rocky road as well as the bottom left pic in the collage - while the naughty rocky road is at the very top of the collage and the bottom right.  DH prefers the original and the intense burst of flavour as a result of the raspberries (although I used Allens red frogs (cut in half) as I could not buy raspberries for love nor money!!) posted at the beginning of this thread, however I really like the Naughty Rocky Road with the hint of salt.

I saw somewhere a Rocky Road or was it Fudge recipe using white chocolate and cranberries and Pistachio nuts. Now I can't find it. 

Can anyone help?

Thanks for this recipe,Hannah. I made 2 chocolate houses for 2 of my sons teachers for Christmas presents! I used rocky road walls, after  dinner mints on the roof and white choc and marshmallows as a chimey with Santas legs sticking out! I took a while to do ( partner said, why don't you just buy a box of chocolates to give to them!!!)
It was a mammoth effort and not cheap but I got a lot of satisfaction from making it and seeing the looks on the teachers faces was priceless. I love giving gifts that are made from the heart.

The teachers' would have loved them. Some of my favourite Christmas gifts (when I was teaching) were hand made, especially that sort of thing.

Made these again today - they are so easy?

I'm making them for daycare teacher gifts so I actually put them in cupcake cases for individual serves - will save me cutting them up.
