Wicked chicken wings

This recipe is from Ayesha's Kitchen.

Tried it tonight after marinating the wings for a day, and really enjoyed by all.

Marinade for wings

1 kg chicken wings (wingettes and drumettes with skin)
1 tbs red chili paste
1 tsp garlic paste (just realized I used 1 Tbs :o) was still yummy :D
Some salt
Some red chili powder
2 tbs vinegar

Ingredients for coating

2 eggs
1 cup corn flour

Ingredients for crumb mix

1 cup flour
1 cup bread crumbs
Some salt
Some cracked black pepper

Directions

Make up marinade and pour over chicken wings, make sure they are covered evenly. Leave covered in fridge for at least 12 hours.

12 hours later

Pre heat oven to 190, line a baking tray with baking paper and lightly spray with cooking spray.

In a mixing bowl beat eggs and add corn flour and mix to a smooth paste (make sure there are no lumps)

Coat each wing in the cornflour mix then coat evenly in the crumb mix. (mix all crumb ingredients together in another bowl)

Place on baking tray

Once all wings are coated and on tray spray them with a light coating of cooking spray.

Bake in oven for 10 minutes, turn over and bake further 5-10 minutes until golden.
(original recipe was for deep fried wings, but I choose the healthier option of oven baked)

Lol, I have a huge pile of recipes still to try. I doubt I will ever get through them faster than what I add to them :D
I also find the longer I leave it to try a recipe the more likely I fogey about it, then it pops up in the forum and I print it out again thinking I will try that lol :D

dede do you think these taste like KFC wicked wings? i love the wicked wing taste from KFC but never have it, was thinking this might be nice on chicken breast strips rather than the wings as I really don't enjoy chicken bones.

Whilst going through all my loose recipes I came across up to 3 copies of some recipes Mandi.  I did a really good cull and what I do now if I see a recipe I think I might like to do is write it in an exercise book with the topic number of the recipe so that I can go straight to it when and if I browse that book looking for ideas.  Saves so much paper as we never get around to doing all the recipes we would like to try but you still have a record of these recipes.

Dede made these last night and was a major hit, so good I have been requested to make for the footy final get together  :D
Only had a problem with the batter, it was really stiff so just added a little water and was fine. A very big thank you for this one
