I did a trial run of these today and took everyones hints on board. I found a similar recipe in the Vegetarian book and so made these changes.
I added about 12 peppercorns and ground them with 30g parmesan and a couple of sundried tomatoes and about a ¼ teaspoon of italian herbs. I then added all the other ingredients. They're really tasty. I didn't roll them that thin so that I could see through them but went about 1-2 mm in thickness. They're very crunchy. DH and I have consumed about ½ of them. I sprinkled salt on some of them and rolled it in.

The 5 seed bread with the second rising seemed to be the same 'crumbliness' as the single rising. It was much more aerated than the normal loaf but I think I like the slightly more dense loaf. So from now on I'll only be doing the one rising. I wonder if a little more kneading would help or would it toughen it? Might try with the next loaf.

.............and then we need it. I have been guilty of going to small supermarkets hoping that they have something I need on their shelves. I like the slow pace we have here in WA. Probably matches me, but who cares, I enjoy it.

Off topic, but I only use my coffee machine (not an expensive one) when I only have 2 coffees to make as it takes so long if there's more. Then I use my trusty TMX, lots of coffees in hardly anytime at all.
Like Stephen I only have 1 coffee a day from the machine and DH hates that sort of coffee. I love the coffee it makes though.

Welcome Terri and I hope your recovery is going well. DH and I spent some time in Gladstone a couple of years ago doing all the industry tours. Loved the caravan park we were at, near the airport and the railway line! But a lovely friendly park and people. We enjoyed our time there.

I've got a loaf of the 5 seed bread just doing its 2nd rising now. I'll report back when it's cooked on how crumbly it is compared to before.
