Cakes / Re: Raspberry Coconut slice (Lowfat & Sugar)
« on: March 04, 2018, 07:03:33 am »
This is an oldie but a goodie. I used 80g butter for the base, and a lot less sugar, only about 2 tablespoons each for the base and the topping. Then I just bake it all at once for 20 to 25 mins. This time I used the boozy strawberry jam that I made in conjunction with the Strawberry liqueur. Quick, easy yummy.

Our backyard eggs make the topping very yellow  :D

I'm bumping this because they are sooo good. Todays ours had just tomato pesto and cheese (the fridge fairy had apparently eaten all the ham  :-)) ) and they were delicious.

Lol Judy. I think that our grocery bill would be truly frightening instead of a bit scary. :D

Lol Cookie.
I do that kind of thing more and more it seems. All my favourite recipes are now in Paprika so it's easy to search on name or ingredient. Also I've put in references to my favourite recipes in cookbooks. Love Paprika. No more lost recipes. I've kept my paper files too though, just in case  ;D

I am still trying to declutter  :-)) It is a long, drawn out process that I'm finding it very difficult. Obviously I'm a closet hoarder  :-[

You have all inspired me to do some cooking today. A nice cool breeze helped too  ;D
So far I've made Halex's Zucchini pesto scrolls, Dede's Raspberry (actually strawberry) coconut slice and Icelandic banana bread and Oatloaf . Chookies no fuss bread is still rising, and the beef roast is nearly defrosted. Most of the scrolls that were to be frozen for lunches didn't make it to the freezer. Some of them didn't even make it into the first photo  :-)) And these photos were taken less than 10 minutes apart about 20 minutes ago, so it wasn't even lunch time :P
PS Just tried a scroll before they all disappear. They are really good :)

Well we were going to have homemade hamburgers, but somehow most of the burger buns have disappeared from the freezer and it's too hot to turn on the oven to cook more. So currently looking for inspiration for Plan B.

What a fabulous garden Chookie.
That's sad Astarra, but yummy homemade tomato paste or sauce is always good.
We have to do major renovations to the Googgenheim (chookhouse) today. Something (hate to think what) had managed to eat/break through heavy plastic mesh, dig under the wall of the Goog, then past some more mesh and I think get in. All the chooks are fine though. The mesh was all pinned down. You can see it in the bottom left of the before photo. Since it definitely wasn't me or a chook, it has no business in the Googgenheim. So today we put in a new metal mesh floor that extends beyond the walls. It means the chookies can't scratch in the Goog, but they don't spend much time in there anyway during the day. Also means they should be safe and sound at night. Before and after shots. PS the auto solar door is awesome!

Chicken Marengo sounds lovely, except for the mushrooms. We're having red salmon and sweet potato patties from the Down to Earth blog.

I love the Kathleen Berney too although I don't own any. I am strictly a TS14+ girl. https://takingshape.com.au/ Sold in MYER and also we have a boutique store in Cairns. You might like to have a look at these styles too Djinni as they would suit you as well. Ok I am short and fat so need the width but many of the styles look stunning on tall and gorgeous like you. The sales are pretty good but also pretty exxy when not. Lots of fun good basics for mix and match.

Gert

Oh Gertie, you silver tongue  ;D ;D ;D. Maybe I'm not looking in the right places, but I never see TS in our local Myer stores. Might have to venture further afield. Although it is difficult to find decent clothes in our area. The last 2 pairs of jeans I bought were in Winton and Longreach in Queensland.

I like Blue Illusion too Chookie. I bought some lovely linen things at a sale a little while back.

MJ Very envious. I wish I could make my own clothes.

Sometimes I wonder where all my time goes. The days seem to just disappear! A quick inventory of the fridge/freezer provides some clues. Home made goodies currently sitting in the fridge/freezer include black bread, milk bread, jam muffins, strawberry jam, tomato relish, tomato sauce, pickled cucumbers, oatmeal crunchies and the dregs of some vanilla ice-cream. There's also a couple of single serve leftover "meals". Tomorrow I'll add some mayo and some homemade hummus all going well. Time well spent I think  :)

Love those reject scrolls Chookie.
Judy you are so organised.
I've been having a cook up while the weather is cool. Today I've made stock concentrate, vegetable soup, black bread, oatmeal crunchies, jam muffins and a slow cooker beef casserole for dinner. Feeling pretty pleased with myself  :)

I'm glad it's not just me with the problem of trying to cull recipes Mab and Judy  ;D  I also have considerable trouble culling cookbooks  :P
It's been raining all day here so I've been trying to declutter (not my strong point) and doing some cooking. Thank goodness the hot weather has gone for a little while.

Oh those books look interesting but I am not buying any more cookbooks. I have been buying some new clothes though, easy care and easy wear from https://www.kathleenberney.com.au  Love this label, designed and made in Australia so not cheap but the quality and customer service is fantastic. I bought orange and black camis, Lunar cardi and Wildflower tee at the end of season sale 8)

That would have been stressful for you both Cookie. Glad it went well.

Not good news Mab. As my Physio says, these things happen when we grow up. Don't know if this helps but my father had both knees replaced and it was a huge success. He went from being barely able to walk to going for a jog most days. When he was in his 90s, his daily jog was only about 100 metres but he was still very active.
