Chit Chat / Super Chef App iPhone/iPad

Has anyone seen the Super Chef TM app? Was only released a few days ago and it's free to download at the moment. I just had a quick look at it and seems quiet slow but I haven't had a real good look through it but seems to be quiet a few recipes.

I got a new (secondhand) massive sharp convection microwave for Christmas and I'm loving it. It is so much better than my oven. I have had so much success cooking everything like cakes, sponges, slices, biscuits and bread rolls. I havnt tried to make a loaf of bread as yet but that's certainly one of the next things on my list.
Just had to share my excitement with all my Forum buddies (although I havnt been around much lately I am still here)

My last microwave was 16litres where this one is 41.5 litres so it is huge compared to what I am used to.

Hi everyone, my life has been hectic lately and I just haven't had much of a chance to get on the forum as much lately. So I decided to take this oppertunity to wish you all a very merry Christmas and a happy new year. I hope everyone stays safe and has a great holidays.
I have my 16 year olds grade 10 leavers dinner next week and my 12 year olds grade 6 leavers dinner the week after. We are heading away camping for awhile and I can't wait. There is so much to do and organize at this time of year it's just crazy.
Oh and my lovely DH is going to buy me a Convection Microwave for Christmas which will be very handy. I've almost had my TM for 1 year now and love it as much as the first day it arrived.

Cakes / Very Rich Chocolate cake.

My DD who is recovering from surgery made this the other day and it is so nice. But a warning it's extremely rich and you can't eat much..
We did convert the cups to grams and convert it to use with the TM and saved the conversion on my iPad but I don't know what we did wrong as it went back to the original recipe. Any way though I would share it anyway and I will try to conver it as I remember.

Recipe: 'Perfectly Chocolate' Chocolate Cake and Frosting

The recipe is presented without resizing, providing 10 servings

This is based on a recipe from the Hershey's Cocoa box and it's a great chocolate cake recipe! This is "health food" because cocoa contains antioxidants!  :)

Ingredients:

2 cups Sugar
1 3/4 cups Plain flour
3/4 cup Cocoa
1 1/2 teaspoon Baking Powder
1 1/2 teaspoon Baking soda
1 teaspoon Salt
2 large EGGS
1 cup milk
1/2 cup Vegetable oil
2 teaspoon Vanilla extract
1 cup hot chocolate Freshly brewed


Preparation:
Cake:
Preheat oven to 1800degrees and spray two 9 inch round baking pans with non stick cooking spray.  
Place sugar into TM and mix 10 sec speed 8  then Combine next 5 dry ingredients in TM bowl and mix 10 sec speed 4.
Add eggs, milk, oil, and vanilla and beat 30 seconds speed 4  
Pour in the hot chocolate and mix 20 sec speed 4 (batter will be thin).  
Pour batter into pans and bake for 30-35 minutes or until wooden toothpick inserted into the center comes out clean.  Cool 10 minutes and then remove from pans to wire racks.  Cool completely before frosting.
(we split each cake into 2 then iced between each layer, then added some cocoa to the remaining frosting to ice the top of the cake)

Frosting:
Recipe: Vanilla Cream Cheese Frosting

Ingredients:

80g Butter
220g cream cheese softened
1 tsp. Vanilla
450g icing sugar

Preparation:
Smooth and creamy frosting made from scratch, with love.

Beat together butter, cream cheese and vanilla in TM for 30 sec speed 4. Add icing sugar mix further 20 sec speed 4 until well combined.  

If too thick, thin frosting with milk a tsp. at a time to desired consistency.

Recipe Requests / Choc mint cookies?

Any one have a recipe for a choc mint cookie? A friend asked me today but I really wasn't sure how to make them. Would you just make a choc chip cookie and add some peppermint essence?

Chit Chat / ADHD and ingredients to avoid

My 13 year old DS was diagnosed with ADHD when he was 3 and has been on and off medication ever since, I have taken them off him a few times over the years to see if they really do make a difference or not (OMG they definitely did).
I know there is a lot of people who totally disagree with medication but when you see your child suffering at school, with his friends and family because they just cant control their behavior then medication some times becomes a necessity.

Anyway as my DS has become a teenager the only medication he can have is now causing him to have constant headaches and migraines even on the lowest dose so I have come to the decision to take him off them and concentrate on his diet to try and help with his behavior problems.

I really need to do something as his school and social life really suffer when he is misbehaving and not concentrating.

Anyones help with what to avoid and how to substitute foods would be of great help.

Chit Chat / What do you buy in bulk? And where do you buy it?

There has been a couple of post going at the moment re bulk buying. So I thought I would start a new post about bulk buying and where people source them from. I find bulk buying to be a big money saver when you have a family to care for.

We get beef, lamb and pork in bulk but my DH does the slaughter and cutting up of these.
I also buy my flours in bulk directly from the flour mill.
Washing powder , sugar, butter, cheese, cream, coffee and tea ( and other stuff)  is always brought in bulk from a wholesaler in Launceston that sells to the public.

What do you buy in bulk? And where do you buy it from?

Made this today and was really yummy and easy to make. Hope you enjoy.

New York Baked Cheese Cake:
Number of People:10
Ingredients:

1 x 250g pkt plain sweet biscuits (such as Arnotts Nice)
125 g unsalted Butter
750g Cream Cheese at room temperature
215g sugar
1/2 tsp vanilla extract
2 tsp lemon rind
2 tbs plain flour
4 eggs
1 x 300ml ctn sour cream



Preparation:
Preheat oven to 160, Line the base of a 23cm springform pan with baking paper.
Place biscuits in TM and mix 10 seconds speed 5 or until finely crushed.
Add butter and mix further 10 sec speed 5. Tip biscuit mix into prepared tin, use a straight edged glass to press mixture firmly to base and sides of tin leaving 1cm at the top of the tin. Place tin in fridge for 30 minutes to chill.
Meanwhile clean and dry the TM bowl, add sugar and lemon rind and mix 10 seconds speed 8.
Add cream cheese and vanilla and mix 1 min speed 4.
Scrape down edges add flour and mix further 10 seconds speed 4.
now set TM to 1 minute speed 4, while mixing add eggs 1 at a time and mix until well combined.
Add sour cream and fold in with spatula until just combined.
Pour mixture over biscuit base and bake 1 1/4 to 1 1/2 hours or until set in the middle.
Turn oven off and Leave cheesecake in oven with door slightly ajar for 2 hours. Then Place cheesecake into fridge for 4 hours to chill.

Can some one tell me what Puff pastry recipe people use? I don't have Lard (From EDC) and was wondering if I replace Lard with Butter? Will that work?

3. My Mobile phone (Can also visit the forum)
4. My car (So I can go to the shop to buy ingredients to cook in the TM)
5. My Printer (so I can print out recipes)
6. My Family (As without them I wouldn't have the need for a Thermomix)

Yep thats about it besides the obvious (House, power, furniture friends etc etc)

Just thought I would start a post for interest sake.
How long have you had your TM?
And what or who convinced you that you needed a TM?

I have had my TM since January 2011.

And the first time I heard about Thermomixes was when my sisters friend used to say how much she wanted one. She eventually brought one and invited me to demos but I never went because I thought at that price I wasn't even interested at looking. Eventually my sister got the bug and brought one and I started to see the amazing things the TM could do and became very interested my self. I did some research and joined this forum. I soon was addicted and just had to have one. It didn't take much to convince DH as he loves food. I never went to a demo before I ordered my TM as I was already convinced that a TM would be a huge benefit for my large family of 7.

So when and why did you buy a TM?

Jelly Cheese Cake Slice

125g milk Coffee Biscuits
80g Butter melted
375g cream cheese
1/2 cup sugar
1 tsp vanilla essence
200ml cream
2 Tbs boiling water
2 teaspoons powdered gelatine
85g packet jelly crystals



place butter in TM bowl and melt 2 minutes, 60 degrees speed 1 then set aside (or could zap in microwave)
Place biscuits in TM (no need to clean) and press turbo a few times until all biscuits are crushed.
pour melted butter back in TM bowl with crushed biscuits and mix 10 sec speed 3 until well combined.
place biscuit mix in lined slice tray and press down with the back of a spoon, refrigerate.
clean and dry TM bowl.
place sugar in TM and mix 10 sec speed 7, add cream cheese and vanilla and mix 20 sec speed 4, scrap down sides.
Add cream and mix further 20 sec speed 4 until well combined.
in a separate bowl combine boiling water and gelatine and mix until gelatine has dissolved.
set TM to 30 sec speed 4 then add gelatine mixture through the lid.
Pour mixture over biscuit base in slice tin, refrigerate for 3-4 hours.
Mean while make jelly as directions on pack and set aside to cool (Don't let it set) when jelly is cooled but not set pour over top of cheese cake mix in slice tray return to fridge until completely set, slice and enjoy.

cattro - Thank you so much for this recipe i made it last Sunday and took some to work they loved it.  I loved it nearly ate it all to myself this is a winner.  And I was so proud it worked.

JD - some recipes melt the butter then add the biscuits and process them.  Others add the unmelted butter and biscuits in together and do it that way.   So looks like anything goes until you get the desired look.

Sorry everyone but this is so easy to make and tastes fantastic.
I know I know its another sweet unhealthy recipe from me (dede) But what can I say? I like converting easy recipes and sharing them. So here it is.

Butterscotch Self-Saucing Pudding:
Converted From Taste.com.au Source Michelle Southan

Ingredients

60g brown sugar
190g self raising flour
100g butter
1 egg
125g milk
2 Tbs golden syrup

Melt Butter in TM 2 min, 60C, speed 1.
Add rest of ingredients and mix 20 sec speed 4.
Pour mixture into well greased dish.

Combine 120g Brown sugar with 1 Tbs cornflour and sprinkle over pudding mix

then Add 2 Tbs of golden syrup to 1 1/2 Cups of boiling water and pour gently over Pudding.
 
Bake in oven 180 c for 40 to 45 min or until a skewer inserted in middle comes out clean.

Serve with cream or ice-cream (or both cause whats a few extra calories)

cookie1 - We had this a couple of nights ago dede and the leftovers last night. It is delicious and it stayed fresh too.

Hally - Oh Dede, this is really really nice, very rich but sooooo good. Hope it lasts a few days. I bought cream and ice-cream to go with it, but ice-cream is the best.

Twitterpated - it was beautiful. The taste far exceeds the amount of effort required to make it.  Just for something really decadent, we had it with the salted caramel maple ice-cream.

Coops - Thanks for a great, easy recipe. Used honey instead of golden syrup as that was all I have in the pantry atm and it was a huge hit.

DJ - Made this tonight. Declared a hit by the family. Used 20 g less sugar in topping. Need thicker sauce, will add more cornflour next time.

Wonder - Made this as per the recipe for a quick dessert last night. It was very sweet but everyone ate it so I will declare it a hit although there were no comments. The topping was very light and moist and there was plenty of sauce. If you are a sweet tooth and like these flavours it's a great quick dessert.

Greyhoundmum - It makes a really big dish enough for about six I think.  It is a lovely texture and is so quick to make.

tarasis - really enjoyed it. Two thumbs up.
