Recipe Requests / Meat Lover Pizza

Hi,
 I am wanting to make some mini meatballs to use to make a meat lovers pizza for the kids but am not sure what I should mix in with the mince to make a yummy combination. Anyone have some ideas? I have some left over mince that I thought I would mix up and cook then freeze for when we have a pizza night.

Chit Chat / My grocerie bill has decreased already

I have had my TM for only one week and went grocery shopping today for the first time since having my TM. I only shop f/nightly and for a family of 7 I usually spend around the $400 mark, but today I spent $290. I was thrilled. I have done so much cooking and am excited about trying new recipes. It was lovely walking past items in the supermarket thinking 'I can make that'. I am hoping that next f/night I will spend less again. My TM is already starting to pay for its self.

I have been inspired by this forum so much, I have found so much help from so many lovely people. Since receiving my TM only 5 days ago I have made Pancakes x 2, cheese and bacon rolls, stock concentrate, chocolate custard, bread, scrambled eggs, choc chip cookies, mayonnaise x 3, sweet and sour meatballs, peppermint slice, french baguettes, butter x 3kg, family chowder, hot choc x 2, and peanut butter.
wow when I read back through that list I even shocked myself because it does not feel like I have cooked that much, must be because everything is so fast and simple.

I am so pleased it worked this time. I tried the recipe from the EDC but failed. Then I tried again and failed. Then I tried re using the failed mayonnaise and failed and gave up.  Did some research and decided to use the whole egg without the butterfly method and it worked. I'm so happy. (dosnt take much to make me happy)
I noticed the original mayonnaise in my fridge has sugar added. Can I add sugar to make the TM mayonnaise a little sweeter?

This recipe is from the Thermomix website. I haven't tried this yet but will be giving it a go soon.

Pavlova
Ingredients
6 egg whites
220g sugar
2 tsp white vinegar
2 Tbsp cornflour

Methods
Place sugar into bowl and pulverise 10 seconds + Turbo. Remove and set aside.

Place butterfly (optional) and egg whites in TM bowl and set for 10 minutes at 37°C on speed 3 ½. At approximately 4 minutes, add the vinegar and then at 6 minutes (approx 1 minute for each egg white) check to see if egg whites are stiff. If so, commence sieving into whole in lid the icing sugar and then the cornflour.  This will take you to 10 minutes, maybe a little longer.

Once this process is complete, spoon mixture onto a baking tray lined with baking paper, place in oven and cook for approx 2-2.5hrs on 120°C.

Once cooked leave in oven to cool overnight.

smholmes - I made this ages ago and it turned out fantastic.  Planning on making it again for a dinner party on Friday.  Going to use the left over egg yolks to make Portuguese Custard tarts.  Yum!

dede - I did try this but it failed for me. Must try again though. The egg whites whipped up beautifully but once I added sugar it all collapsed on me (maybe I added to quickly).  I still cooked it in a cake tin and it was yummy but not the same. Must try again when I have heaps of eggs to use up.

lozzylooloo - Have never made pav before so today I decided to give this one a crack in my thermie.
Followed recipe pretty closely, using egg whites that had been kicking in the fridge for a few days.  Everything came together beautifully Smiley
Had read some of the linked hints, and I think that helped a lot.
However, I decided that since my oven runs hot, I would drop the temperature.  Probably shouldn't have done that - the outside didn't go crunchy, it was just kind of chewy?? Also all sank and spread slightly when I tuned oven off (even though I left it to cool in there with door cracked).
So, next time I will stick with the recommended heat and then reassess if it starts overcooking Wink
Still very edible - a perfect mushy pav centre, maybe a tad too sweet for my taste, but ok if covering with cream and fruit rather than sweet stuff.
Very stoked with myself, and will definitely make again - but not too soon, since I just learned DH doesn't like pav, so this one may be mostly destined for me!!! Oh dear.

Cakes / Choc Chip Cookies

Here is my first attempt at converting a faviourite recipe for the TM. I made these at 6am thismorning. The come out perfect. Please comment if you note any mistakes with the recipe. There are probably other recipes similar or the same as this but here we go anyway.

Choc Chip Cookies

150g Butter
100g Brown Sugar
85g White sugar (or Raw)
1 egg yolk
1 tsp vanilla
220 g Self raising Flour
choc chips as desired (I add 100 grams)


1) Pre heat oven to 180 degrees and line baking trays.
2) Place butter, sugars and vanilla into TM bowl and cream together for 20 seconds on speed 6, scrape down sides.
3) Add egg yolk and beat on speed 3 and gradually add flour, set lid to closed lid position and mix for 30 seconds on Interval speed.
4)Add choc bits and mix for 20 seconds on reverse + speed soft.
5) Roll mixture into balls and place 5 cm apart on prepared trays. bake for 10 - 12 minutes or until lightly browned.

Hi all,
I decided to make a loaf of bread today for my 5th recipe with my new TM. I followed the recipe in the EDC but used half white and half wholemeal bread flour and also I kneaded the dough 3 times and allowed to rise in-between each knead for 20 minutes. The bread came out beautiful. Yum Yum. 5 recipes and all spot on. I am making sweet and sour pork meat balls tomorrow for dinner.

Loving my TM (How did I survive without it before now?)

Chit Chat / Another Butter question

Hi all,
 I have read all the posts here on butter making and just wanted to ask a question. I have just brought 10 litres of cream ready to make butter but didn't realize till I got home that it is thickened cream and not unthickened cream like I wanted. Anyway I have read that I can still make butter with thickened cream. But as thickened cream has gelatin and other things in it can I still use the butter milk as usual? As its Friday I cannot take the cream back and swap it until Monday and I'm not sure if the place I got it from would take it back after 3 days.

Hi all,
Can anyone help me with a couple of question with butter making. Just wondering if people add salt to help keep their butter longer and if so how much would you add?
Also what kind of oil is best used and again how much would you use?

Hi everyone, I was just wondering what would be the most common Herbs people use with there TM? I am starting a Herb garden and wondering which herbs people use the most. I have Parsley, Thyme, Oregano, Sage and Chives so far. What else would people recommend?

Chit Chat / Thermomix and healthy eating

Hi all, I am a little concerned about buying my thermomix which I need to pay for today. Everyone I know who has a thermomix said the only problem with it is they have put on weight. I definitely don't want to put on weight. Has other people had the same problem. How do I avoid this. does thermomx recipes have more sugar and fat? I wanted to buy the Thermomix for healthier eating and to save some money.
Any comments?

Hi all, another newbie here. I have just ordered my TM, but will have to wait until after the 4th of Jan before the order will go through. My sister has one and I think they are brilliant. I spent the day at her house yesterday and we were on a mission to convince my husband that we needed one two. and as he loves food I didn't think it would be too hard. lol. Anyway firstly we made butter, the scones with the butter milk. Whipped cream, made peanut butter, relish and then fruity dreams. That was it he wanted one. So I ordered mine today.
I cant wait till mine arrives (What to cook first?????)
