Christmas Rocky Road
375 gms chocolate melts
180 gms clinkers, cut in half
190 gms raspberries (jubes not fruit!, cut in half
100 gms baby marshmallows

Melt  chocolate in TM bowl for 5 minutes/50/Speed 1. 
Scrape down edges and melt for further 1½ minutes/50/Speed soft until desired consistency is achieved. 
With 30 seconds to go, change to reverse and add clinkers, raspberries and baby marshmallows.
Once combined, place into a lined lamington tray and cool before cutting into squares.

This recipe came to me via email so I'm not sure who it "belongs" to but it was very yum. It was a hit with both my sons & grandsons last Christmas. I will have to do it again this year and take some photos. although it looks similar to the clinker slice.

This recipe was converted when I received it although all you are doing is melting chocolate!!

Suggestion: If you buy (a third half) more clinkers than you need, you can eat all the yellow ones (my favourites) as you cut. Pink and green only would be so much more Christmassy!!

Ahhhh Rocky road, a little taste from home. My Mum is still sending across the Darryl Lea RR each year for me. Would love to try this...just wish they sold clinkers in Italy!

I've just made this, but my version.  I used mini marshmallows, craisins and pistacios.  Looks delicious, just got to wait for it to set so I can chop it up and try some. Hope it lasts until tomorrow!   :D

Hi fundj not sure I'm experienced enough to answer this one!

The melting of chocolate part for sure the added bits most likely. If it looks too much in the bowl you could (god forbid!) hand mix!!

I have just done a double batch and added the marshies  two and three at a time and had to hand mix at the end.  Came out just fantastic all the same.  Yummmm!

Thanks Marina.I made these when Rara posted the recipe for a national charity event called Comic Relief (Red Nose Day), to sell at my weekly upholstery class.I called them Chocolate Covered Noses and raised £15.A couple of the girls,who are Australian were impressed. ;D

CC sometimes you can get 'aussie type lollies' from expat type shops or online....i usually stock up when im in oz... raspberries, red and green frogs, minties, jaffas, mint leaves oh and the list goes on...they only have haribo lollies here snif!

there is a shop in london here (http://www.southerncrossdeli.co.uk/bagged-lollies-11-c.asp) who delivery also AND they have cherry ripes  ;D ..as well as raspberries etc

no problem actually its the first one i have come across where the postage isnt ridiculous..quite often the lollies are cheap then they whop you with a hundred dollar postage fee!  the lollies arent as cheap but hey they are imported and the postage is reasonable to France so imagine quite good in the uk or if your in london no postage  ;D  Come birthdays etc I think I will be ordering with them... :)

Made this for Christmas hampers - very nice indeed, DH even commented with the small sample I gave him.  Easier to cut the raspberries with scissors than a knife and so easy to make.  I mixed it all up on a higher speed/reverse/speed 2 once I added the goodies to the chocolate.

I am going to try the recipe from the 100 years of sweet baking memories,  but using snakes instead of nuts.

If i made these now for sunday, they would be gone, will yours last until the weekend.

Certainly will Hally, I have vacuum packed and sealed it all in individual slabs except one slab which I took the photo of - as you can see, I cut it into small pieces.

I was somewhere today and picked up a piece of Rocky Road wrapped in cellophane. It would have been 7cm x 7cm and cost $4.50 for one piece. It really didn't look that unbelievably good  :o They should rename it Chocolate Gold. Yours looks lovely JD

Judy I actually found it easier and less hassle if this recipe is  :-X  :-X w'out thermie - getting the choc from around the blades is a pain in the....... but then again the last time this was made was multiple batches for the dessert bar in June  :)  :)

You are probably right there Robyn.  Melting the chocolate in thermie then pouring it over the other ingredients would probably be easier as the melted chocolate runs quite easily from the bowl and scrapes out easily too but once the other ingredients are added it then firms up.  I wasn't too fussed with what was left at the bottom of the bowl though.

CP I packed 8 slabs around 8 x 8cm  - wow $36 worth of Rocky Road.  Another example of how much money the TMX can save us by making our own.

I find just melting the chocolate in the microwave and then adding all the other ingredeints the most time saving and easiest method. I hate wasting any chocolate when melting as the good chocolate is so expensive. I only ever melt in the microwave and as long as you do it slowly never had a problem.

Ok have made this.
Its in the fridge cooling, is that right?

It filled one slice dish for me, will probably need to do another batch, yes it was hard to get all the chocolate out f the bowl, did the best i could.
Marsmallows, clinkers & snakes went n mine.

Do i take out f the fridge  and let it warm up a bit to cut it?

Hally, I only put mine in the fridge to set and it is now in the pantry vacuumed packed & ready to make up my baskets.  A zip lock bag would do the job though.

Amanda, it is quite a firm rocky road because small marshmallows not big ones are used therefore it sucked up beautifully and is quite tight.  You see rocky road sitting in Darryl Lea's just in cellophane so I figure vacuumed sealed is a far better keeper. You could certainly stop it before it sucks out all the air if you preferred.

Made a 2nd batch of this today.

This time I melted the chocolate in tm, then i poured it over the lollies & mixed myself. Yes the chocolate was easier to come out, but the tm mixture was all evenly coated with the chcolate, mine had the odd splash of colour coming through.

Having done both ways, next time i will do it all in the TM

Both batches in the pic below - the top pic shows the uncut section of the original rocky road as well as the bottom left pic in the collage - while the naughty rocky road is at the very top of the collage and the bottom right.  DH prefers the original and the intense burst of flavour as a result of the raspberries (although I used Allens red frogs (cut in half) as I could not buy raspberries for love nor money!!) posted at the beginning of this thread, however I really like the Naughty Rocky Road with the hint of salt.

I saw somewhere a Rocky Road or was it Fudge recipe using white chocolate and cranberries and Pistachio nuts. Now I can't find it.  :(

Thanks for this recipe,Hannah. I made 2 chocolate houses for 2 of my sons teachers for Christmas presents! I used rocky road walls, after  dinner mints on the roof and white choc and marshmallows as a chimey with Santas legs sticking out! I took a while to do ( partner said, why don't you just buy a box of chocolates to give to them!!!)
It was a mammoth effort and not cheap but I got a lot of satisfaction from making it and seeing the looks on the teachers faces was priceless. I love giving gifts that are made from the heart.  ;D

Help!!! What did I do wrong, Made this the first time using Clinkers, Turkish Delight, mini marshmallow and Pistchios, it worked beautifully,  ;)  tried again using mixed nuts and violet crumble instead of clinkers  but halfway through the mixture stopped melting and clumped up, I have tried to melt again over a bowl of boiling water but its not having any of it  :-[ such a waste if I can't rescue it, looks terrible but still tastes good, any ideas anyone ???

At some stage, Kazza we all have a similar horror story when melting chocoolate - the chocolate has seized!! (I had exactly this conversation with my SIL during her visit last week!!!!) Either  moisture has got into your mixture, (whether that be in the form of steam or water spalshing) or the chocolate has got too hot and scorched. Adding water to melted chocolate has the same effect as adding water to flour  - it turns into a paste, the small amount of water acts as a kind of glue, wetting the sugar and cocoa particles just enough to make patches of syrup that stick the particles tog. If a bit of water accidentally gets splashed in your bowl, you can save the choc by adding cream and using it as a ganache or sauce, unfortunately you can kiss the rocky road or any such dish good bye and you will need to start over.  :-\ mmm I didn't add any water at all it was all mixing nicely in Thermie on the correct temp then all of a sudden it changed, the choc mixture now looks like gravelly mud!!! :-))
I wonder if perhaps the violet crumble had too much moisture in it??? Thanks for the help Frozzie and Johnro, I might try the cream, Merry Christmas  :-*

That's exactly what I plan to do CC. I couldn't believe how much DS ate while I was at the gym, shame he doesn't eat proper food in those quantities!! He's going to a mates for a sleep over today so he won't even know I've made it if I do it tonight.

Made a double batch last night. DS didn't end up going to his mates so I'll be interested to see if he manages to cut any up while I'm at work today.
