Yum, yum, yum. I know this is a favourite of many, but couldn't find a review so started this one.
DH made this for dinner tonight and it was delicious, DD (age 3) loved it too.
He followed the recipe precisely. Next time I'll probably add more vegetables, not that they are necessary, it's just always handy to throw some in!
For those without the book, the original recipe is on Jo's blog...there is at least one tweak though (using coconut oil instead of olive oil/butter, definitely a good tweak, I think the coconut oil adds something).
Happy cooking!

It is good Jam and even nicer when DH makes it.
Last time i used cashews instead of almonds, delicious.
-
I love this too & always use cashews instead of almonds because of DH
-
Lots of reviews on the link to the recipe on our forum which CC added to the first posting.

We had this for the first time tonight. (Hanging my head in shame). I made it exactly as Jo said. We really loved it and I will definitely be making it again.
-
Absolutely love this soup! Reheats really nicely with a bit of added water :)
-
I made this for dinner tonight. We loved it. ;D
-
Mmmm. It is rainy here today and I was thinking of a soup. We really love this.
-
I always make this when someone I know is sick or going through a rough time. I make it and buy a packet of "steam fresh" vegetable so they can microwave a bag of veges to put in their bowl and spoon the soup over. Yum Yum Yum! :)
-
That's a lovely idea.
-
We love this soup and I often make it when guests are coming for lunch as it makes a nice simple meal. Just add rolls and perhaps a light dessert and you are done.
-
OMG I can't believe I've never made this before. It is absolutely delish !
Followed the recipe exactly. Already looking forward to left overs tomorrow.
If anyone hasn't made this, just do it. It's healthy but doesn't taste like it 😝

I know everyone seems to really like this recipe but no one in the family enjoyed it, not sure if I did something wrong but it didn't seem to have a lot of flavour and I didn't really like the texture.
-
I remember feeling the same when I made it Wonder but DH loved it - go figure!
-
I'm glad I'm not the only one Judy, it gets fantastic reviews everywhere so a lot of people must love it.
-
We enjoyed it but everyone is totally different. Thank goodness. ;D
-
I combine Judy's Chicken and vege soup recipe with Quirkys brown rice soup. I love using chicken drumsticks for the meat component.
-
I had to share my leftovers with a very fussy DH that doesn't like to taste anything different and even he liked it.
-
Made this yesterday, for the first time. Loved it. More a meal than a soup. I liked the way some of the chicken was shredded and some stayed in lumps. I used Brons Stock concentrate and home made liquid chicken stock. Added lots of parsley.
-
Yum; made this again last night for dinner when we had people in and it all went; unfortunately no left overs for tonight. I almost put too much stock in and thought it was going to be too salty but was OK.
-
I made this through the week for DH, adding some extra veg as there's enough liquid to take it. Also increased the chicken content to about 400g as that was what I had. I also added a umami cube from a new batch that I'd made the day before.
He really liked it and the taste I had I thought it was really good too. As it makes heaps there's quite a few serves now in the freezer for him. Will make again. :D
-
I like the idea of the umami cube JulieO. I'll copy your idea next time I make it.
-
I will copy too and make them in cubes; was going to do it today so glad I saw this. Last time I put it in the freezer like the stock and of course it went hard; silly me.
