Thanks Nik2WIN! I tried this recipe on the weekend. It was so simple to make but was totally delicious, was gobbled up quickly at my house!

Sorry i did miss the step about adding the bacon in.  Have fixed it up now.  When i first tried this i added the bacon when i added the vegetable stock and then blended it at the end.  The bacon was blended with it into tiny chunks but some people may find this unpleasant when eating it so it probably best to add it at the very end.  It tastes good either way  :)

Good one dad! Old family favourite, i like mine with a little more salsa ao i add about 100 - 120g.  Wondering how this would taste if I added a a bit of the chilli bbq chutney i bought the other day?!

Pumpkin, Zucchini and Bacon Soup

Serves 4

1 onion peeled and quartered
300 g of bacon roughly cut into chunks
1 tbsp oil or butter
450g of pumpkin peeled and cubed
200g of zucchini cubed
1 tbsp of TM Vegetable Stock
500 g of water
1 tsp of chopped garlic  paste
pinch of sugar


Place onion into TM bowl and chop for 5 seconds on speed 7
Add butter or oil and bacon and saute for 3 mins at 100 degrees on speed 1
Remove half of the bacon
Add pumpkin and zucchini and chop for 15 seconds on speed 7
Add Vegetable stock, water, sugar, and garlic and cook for 20 mins at 100 degrees on speed 1
Blend for 10 secs on speed 9
Add remaining bacon.

Note: I used jar garlic but you could use fresh garlic adding it when you chop in onion.

I loved this recipe! I tried it for the first time last night and it came out well to my suprise.  i was a little worried that it was going to be too runny but it was just nice and moist by the time it came out of the oven. I also made mine with a 1/3 sweet potato, 2/3 potato top and put them in a crust to cook which turned out rather nicely.  I also tried some zucchini chutney instead of the fruit chutney.

Hi thermomixers!

I am have been using the thermomix forum for about a year now, however i have never taken the time to introduce myself.  Im Sarah, I got my thermomix for xmas in 2011from my parents and have found that it helps me eat healthier and makes me more adventurous in my cooking. My dad is also a member and introduced me to the forum. I really enjoy using the forum and am looking forward to adding my own recipes! :)
