250g pkt Arnott's Butternut Snap Cookie
10g desiccated coconut
100g unsalted butter, melted
40g Coconut oil (if you have Malibu you could use instead)
40g lime juice
50g caster sugar
200g thickened cream
50g coconut cream
3 kiwifruit, peeled, thinly sliced
Method:
• Spray and line muffin tin with strips of baking paper (this will help you pull tart shells out of the muffin tin). If you have 6.5cm fluted tart tins (with removable bases) they would be perfect to use, spray with oil
• Place biscuits into TM bowl and crush for 10 secs / sp 7
• Add the coconut and butter mix for 10 secs / sp 5
• Divide the biscuit mixture among the tins and press evenly over the base and side of each tin.
• Place in the fridge for 1 hour to chill.
• Place coconut oil or Malibu, lime juice and 40g sugar in to TM bowl mix 4mins / 100 degrees / sp 4, sugar should be dissolved.
• Decrease heat 37 degrees / 5mins / sp 2 until syrup thickens, set aside to cool down
• Place cream, coconut cream 10g sugar whisk with butterfly in 2-3 minutes / sp 4 , until soft peaks form
• Remove pie cases from tins and fill with cream mixture
• Top each pie with 3 kiwifruit slices
• Drizzle over the syrup

That looks lovely TME and I like the idea of using Malibu instead of coconut oil too ;D

TME, did you make a note of the times for this step please?
Place cream, coconut cream, 10g sugar - whisk with butterfly in secs / sp , until peaks form.

I did half a batch of these today. Halved biscuit case & syrup quantities but kept the filling as per recipe as half quantity didn't seem enough. How stiff was your filling TME. Mine just wouldn't thicken so I prepared and added 1/4 sheet titanium gelatine at the end, I think I could have used 1/2 sheet though as it's still not thick enough.
I used coconut powder to make up the required amount of coconut cream but this shouldn't have been the reason for my mixture not whipping to soft peaks would it? The syrup really topped the dessert off, used the Malibu option.

They look great Judy. My filling was quite soft but firmed up when it was in the fridge.

Thank you TME, perhaps mine will too - especially with that little bit of added gelatine ;D It was very nice, thanks for the recipe.
Oh, forgot to say that I added about 6 drops of coconut essence to the cream as well as it didn't taste coconutty enough with the coconut powder.

Mine still didn't thicken in the fridge TME but for Mum and me it didn't matter.

I kept forgetting to use the Malibu syrup from this recipe when I had one of these little tartlets so I poured it over a fresh fruit salad which was really nice.

What a great idea. Coconut syrup would be delicious on fruit salad.
