Title: Magic Mayonnaise from Judydawn.
Post by: cookie1 on January 12, 2010, 01:49:41 am
Wow, Judy your mayonnaise is to be the first.
I have simply copied it-hope that's ok.

Magic Mayonnaise from OZtion Forum

1/4 cup lemon juice
1/4 cup grapeseed oil
2/3 cup sweetened condensed milk
1 egg yolk unbeaten
1 tspn dry mustard
1/2 tsn salt
few  grains cayenne - 1 light shake

Place all ingredients into the TM bowl in the order listed. Blend on speed 3 for 1 minute.

There was a comment on the forum that this mayonnaise used on coleslaw tastes like KFC's which is why I made it as I love KFC coleslaw and haven't had it for years. Don't know if it is but it is very nice.  Just use the amount which suits your taste.

Thanks Cookie, a much needed addition.  I will delete the other two floating around. Easier said than done.  I see we can detete our messages but not our recipes.  Perhaps you could do it for me please Cookie - no point having in in 3 places now that we have the correct place for it.  Are you going to transfer everything which now belongs in here as well?  Much appreciated.

Looks a great recipe Judy. Would olive oil be to strong. I don't have any grapeseed oil and in typical fashion I want to try it now.

Yes, all extra virgin olive oil would be a bit strong - just a vegetable or peanut oil would be better.  or even half and half.

Thanks Thermomixer, tied up with the children this afternoon.  I would have said Olive oil would be too strong for this too.

This is the best ever mayo - my grandmother inlaw always made this recipe and used 4oz (125g) of melted butter instead of oil.  I sometime put a clove of garlic in TM first for an aoili style and/or dill to serve with fish.   :D

I would like to make this mayo tomorrow, but am not sure what dry mustard is ....... is this mustard powder?  Could I use seeded mustard instead  ??? ???  Thanks!

Yes KJH, it is mustard powder but if you don't have any I don't see why you couldn't substitute it for seeded or dijon mustard.  Add a bit, taste it and see if you need more would be the way I'd go about it.

Thanks so much Judy!  I am trying Chookies KFC for the first time tomorrow, and wanted to make coleslaw to go with it.  I am sure they will both be yummy!

This is superb.

Never quite found a really good coleslaw dressing recipe, but this is it.

Thanks JD :)

What do you do with the rest of the condensed milk, make more?

It lasts forever almost Hally, don't worry about it - it will get used sooner or later, just put it in a sealed container.

Glad you enjoyed it, it sweetens coleslaw nicely.

Thanks JD, so the dressing should last a long time too?

It has an egg in it Hally so no, it wouldn't last as long as the unused portion of condensed milk.  You would normally use it all before it goes off though - it lasts me no longer than 2 weeks.

I was going to ask how long this would keep but I se e you have already said about 2 weeks.  I wouldn't use that much mayo in 2 weeks and I hate throwing food out.

I was thinking of halving the recipe but half an egg yolk, that's gonna be interesting :o

A small egg yolk Chrissa?

I get my eggs from a local farm so they are usually huge but I'm guessing they'll have some small ones hidden away somewhere.  I'll ask and then give the mayo a go.

My mum used to make her own mayo (non TMX) and I always thought it was a waste of time when it's so cheap to buy but now - OMG - I've become my mother :o

Yay KFC coleslaw taste. My grandmother always made homemade mayo with egg yolk. My mum is a mayo buyer. So maybe I'll become my grandmother.

:D :D :D :D  Well the gene is in there somewhere.  Sometimes it lays dormant for many years but as we age, it does reveal itself.

I must admit, I was a little unsure about this mayo, it just didn't sound right to me, but wanting to make coleslaw today and having all the mayo ingredients handy I made some.  Once combined with the other coleslaw ingredients, I found it went perfectly together.  :D  I shouldn't have doubted you Judy.  ;D

I wouldn't use it for an Asian salad Margaret, there is a recipe on the back of the noodle pack which I use or there is this low fat one from Annette Sym which is good too.

1/2 cup no oil, fat free French dressing
1 tablespoon soy sauce
1/3 cup brown sugar

Made this for the first time today, Yummo! Thank you for a quick and easy failproof mayonnaise.
I used it in the broccoli salad, coleslaw and as a 'dipping sauce'for the KFC chicken, everyone liked it :)

Has anyone jotted down the weights of the ingredients? I would like to try this.

If not I will post the weights when I make it.
