Does anyone know how long this will keep for. I have not done a lot of preserving and I am nervous about giving people food poisoning  ;D

nix,  don't know how long it will keep,  because of the eggs.   My lemon butter also has eggs and will keep indefinitely in the fridg.  I would make sure the container was sterile ,  but still wouldn't keep it for more than a month.

This is our all time favourite lemon curd; I use it for all sorts of things, in little lemon cakes, pancakes, on toast and even make ice cream out of it. Thanks Chookie.

Made this today with 450g sugar.
Rind and flesh of two lemons, plus juice of half of another lemon, left off pith as don't have Meyer lemons.

Slight glitch, forgot eggs in first ten minute cook as someone came.
Let cool down then added eggs, and started again.
Will fridge tomorrow.

Very good recipe, and very yummy!

Making cake tomorrow and fill,fill,with the part pot leftover.
