Title: Chicken with Lime, Thai style

This all in one dish is,  rice in Basket, Chicken in Varoma bottom tray and Veggies in top tray.  This amount is for 2 but can easily be doubled.
You will need a heat proof dish with lid for the chicken and the sauce.
The timing will depend upon,  how big the pieces of chicken are,  and if you use breast or thigh.
Place 1 liter of cold water into TMX bowl.
RICE IN BASKET.  
I used medium grain rice,  200g weighed into basket.  This should take about 20 mins to steam.

VEGGIES INTO TOP TRAY
Hard veggies such as carrot and pumpkin in tray first,  add greens later as they need a shorter time.

CHICKEN AND SAUCE
Add to heat proof dish,
250g of chicken cut into 3 cm. cubes or strips.
Juice of 1 lime
2 kiffir lime leaves , torn in 1/2,  or grated rind of 1 lime
1 clove of garlic,  crushed
1/3 cup of sweet chilli sauce,  or more if you like it spicy
1/2 cup of water.
Mix all together,  put lid on dish and set TMX, 35 mins, (breast),  45 mins (thigh)
Add hard veggies in top tray.
Check rice at 20 mins after water boils.  Remove to Thermoserver to keep warm.
Add soft veggies to top tray.

Mix 1 teaspoon of cornflour with a little water and stir into chicken,  at 25 mins.

The rice is enough for 2 meals for us, I reheat in Microwave or freeze for another meal.
I place 2 bamboo skewers under heatproof dish for better circulation.


Katiej: I added a little soy to the sauce and my DH added some extra chilli to his.

JuliaC83: I used 600g chicken thigh so doubled rest of ingredients. I cooked up 350g of brown rice. So I did the following order:
1) Mince garlic cloves in TMX and add to heatproof bowl
2) Rinse jug. Add 900g water
3) Rinse 350g brown rice in basket and place in TMX.
4) Dice chicken and add all ingredients to heatproof bowl.
5) Place bottom Varoma with chicken/sauce in heatproof bowl onto jug. Set 35min, Varoma, speed 4.
6) Remove rice and place in Thermoserver. Add cornflour mixture to chicken. Add top layer Varoma with veg. Set for 15 min, Varoma, speed 4.

Judy,  the pleasure is all mine.  I bought a Kilo of Chicken breast fillets for $10.  This has made 4 meals.  $2.50 a meal for 2 people for the meat!!!!!!   What I like about these particular All in One  meals that I have been posting is that each part keep its own flavour.   Cooking the Chicken in the dish means that the flavour is kept in the dish and doesn't  ' contaminate' the veggies or rice.  Different therefore  from a stir fry.    Next I am going to try placing some Kiffir lime leaves in the rice to see how much flavour passes to the rice.  Hope you enjoy these recipes.

Good morning . I have not cooked in my varoma much as yet and am unsure what sort of " heatproof dish " to use when cooking this recipe?

Sounds lovely but I have to admit I'm confused about the heatproof dish in varoma - can you please take a picture for us next time you do this Chookie?

This is the dish I use most.  It will take 4 serves of Chicken.  I place 2 bamboo skewers under the dish

So the chicken mixture simmers in the heatproof dish and the steam does not come into direct contact with the food at all ?

Yes.  It is gentle heat and nothing is lost.  Neil Perry uses this method a lot.   I particularly like fish cooked like this.  I have posted a couple of fish recipes.  
I think JulieO uses bamboo steamers on top.  I think she fits them into the Varoma dish.

Chookie i had never thought of cooking something in a dish in the varoma like the oven before your lemon chicken recipe.. Except for ramekns and dariole moulds etc so thx..

Chookie - I noticed the dish you use is one similar to a microwave type - When the dish is in the varoma do you seal the dish completely or do you open the little vent on top . . .?

GF,  usually closed but doesn't matter.

We had this for lunch & it was lovely.
I added a little soy to the sauce and my DH added some extra chilli to his.

As we were eating it my DH said that Achookwoman is one really smart Chookie! He said to say thank you again for all your wonderful recipes. I agree!!

I made this tonight without the sweet chilli sauce. It was yum, but I think next time I would make sure I had that ingredient. I couldn't find a dish that I could fit into the varoma so instead I used an oven bag. It worked ok but made it a bit difficult to add the cornflour toward the end.

I will try it again though.
