This recipe is adapted to TMX from “Maggie’s Recipe for Life “ Book.
I have made some small changes to suit what I had available. For original recipe, page 80.
Into TMX bowl place
110 g wholemeal or Spelt flour.
1/2 teaspoon of carb soda
1/2 teaspoon of baking powder
1 tablespoon of caster sugar, (Stevia sweet )
30g ground almonds
50g probiotic yoghurt, (I used Kefir)
130 mls almond milk, ( I used Lactose free milk)
Mix, 10 seconds, speed 4
Scrape down
Mix 5 seconds, speed 4
To cook and serve
Heat non stick pan to moderate.
Lightly brush butter over a non stick pan and place tablespoons of batter.
Turn when bubbles appear.
Remove and keep warm.
Serve with yoghurt, grilled peaches and yoghurt.
A drizzle of raw honey if desired.
Makes 18

That looks so good Chookie. Were they as tasty as they looked?

Judy, they were lovely. Could easily serve them to visitors.
Have posted recipe. Very economical as I had all the ingredients.
I would say that the recipes in this book have been well tested.

I've just had lunch and I could still eat those. yum.
-
The pancakes look yum Chookie.
-
Cooked all the batter and reheating some for breakfast. Might add Pomegranate seeds this time for a bit of colour.
-
I had a look at the book today and your photo is better than the one in the book Chookie.
-
Thanks Cookie. What did you think of the book. ?

I had a fairly quick look in it Chookie, but haven't bought t yet. DD was going into the city today and was going to get it for me, but got called in to work. She wasn't happy as she has been on call each night for the past 5 nights. But that's life!

I’m planning to make these very soon! I forgot to bring my spelt flour to my DD’s, but may try a blend of lupin and wholemeal flour.

MJ, these are best made thin. So add a little extra liquid if mixture is too thick.
