Title: Banana Choc Chip Muffins (makes 12)

3 medium very ripe bananas, cut into chunks
1 egg
1/3 cup buttermilk or skim milk (80mls)
1/2 cup splenda sugar replacement (10g) or 1/2 cup castor sugar (100g)
1/2 cup brown sugar (80g)
1.5 cups plain flour (220g)
1 teaspn bicarb soda (baking soda)
1/2 tspn salt
3 tblspns choc chips
2 tblspns chopped walnuts (optional)

Preheat oven to 180oC.
Lightly spray muffin tin liners and place in muffin tin.

Place bananas in TM bowl and mash for a few seconds on speed 8.
Add milk, egg and sugars and mix 5 seconds/speed 6.
Add flour, bicarb soda and salt and mix 5 seconds/speed 6.
Add chocolate chips and walnuts and mix 5 seconds/speed 4/reverse.

Spoon mixture into liners evenly and bake 180oC /25-30 minutes.
Allow to cool 5 minutes then cool completely on a wire rack.

I didn't have any fresh bananas so used 240g frozen slices which I blitzed for 10 sec/speed 8.

I got this recipe off the net many years ago when I was watching my weight (can't remember where now though)
and using the splenda, they are 167 cals per muffin with 1.3g fat.

Nay-nay -  I just arrived home and out on the cooling rack is a batch of these!! My darling son who has just turned 12 had them made for me. I asked, "What recipe is this!?" and he said it was judydawn's off the forum. LOL He wanted to make something for afternoon tea and was not put off when he found I'd taken our recipe book on the demos with me, he came straight to the forum to look up a recipe! How proud am I!!

Thanks so much JD!!! I just arrived home after doing a whole day of demo's and out on the cooling rack is a batch of these!! My darling son who has just turned 12 had them made for me. funny isn't it - JD is a household name here too  ;D ...maybe JD should start up her own topic (I'm serious): JudyDawn's Recipes, and just list the titles with the hyperlinks. JD can then edit the list when a new recipe of hers is added to the forum. In fact, this might even be a good idea for anyone who contributes a lot of recipes???

NayNay you have a thoughtful little gentleman there who shows a lot of initiative.

Nay-Nay that is gorgeous. I would imagine that you nearly cried (if you didn't). He sounds a lovely son.

The idea of people listing their own recipes is a good one. I can usually remember who put the recipe up, I then go and scan through all their posts to find it.

Ha ha, not a bad idea though. Lot of work involved and where would be the best place to put it. Would others be prepared to do the same thing?

if you have kept a hard copy of your recipes in a file you would know the name and category, then you could search by name, and then hyperlink IYKWIM  ;D

The only hard copies I have are my print outs for my recipe folder  ;D ;D ;D and I'm sure you don't mean those  :-)) :-)) :-))
It could be done but I wouldn't want anyone to think this was JD's forum  :-\ :-\

i just discovered that if you click on to "Started By" at the top of each section, the names are listed alphabetically. it makes finding a recipe if you know the author very easy  ;)

Ha ha, me too Cookie.  I couldn't find 'Started By' to begin with.  Another computer lesson, thanks CP63 - no need to do a list now, it is all there.   :-* :-*
