Yes white sugar would be OK.   I used raw sugar in some jam recently. Ok but different sugars affect the setting time.

Chookie, I bought a little fig tree at the growers markets on Sunday it had one fig thats just about ready to pick. What I've read is they fruit in one to two years so I'm sure you will see it fruit. 
I child-proofed my house, but they still get in!

A friend rang from Augusta last week to ask if I would make him some fig jam, if he brought me the figs. Of course I said yes. I used this recipe twice and got 4 lovely jars. I overcooked the first batch a bit so it’s fig jam/paste.
May all dairy items in your fridge be of questionable vintage.

Cookie, when I over cook jam and it’s a bit too thick, I just add a bit of water or lemon juice and cook for a few minutes more. However it’s sometimes hard to tell until it sets up.
