I Love Bimby has asked me to post this recipe as her computer is still out of action.
Vegan Custard
Zest of 1 lemon
60g sugar
500g soy milk (can use rice, almond or any other alternative milk)
20g macadamia oil
30-40g cornflour or 50g plain flour
Pulverise lemon rind and sugar together on speed 9 for 10 seconds. Scrape down the rind and icing sugar from the sides of the bowl.
Add all of the other ingredients and cook for 7 mins at 90o on speed 4.

I also added on the other spot where Thermomixer has popped this that it is easy to make a vanilla version using some vanilla extract or vanilla bean paste. Using the vanilla will make it a little grey though. No issue, it still tastes yummy!
Also I forgot to mention that any vegetable or nut oil would be fine. Someone actually suggested vegetable oil but I thought that the Macadamia would be a nice touch.
I made this for a Vegan themed demo last week and was thoroughly enjoyed. ;)

I know it may be some time before you can answer - but what else was in the vegan demo ?

She did tell me Thermomixer but I'd never be able to remember everything so I'll ask her and get back to you.

I'm back with information from ILB (we keep in touch via her blackberry). At the vegan demo (for several families I believe) she made the following:-
Orange & Mango sorbet - no egg
Bread was the basic TM bread
Dips - Basil & cashew pesto from the EDC without the cheese &
Guacamole
Salad - Beetroot
Soup - pumpkin with no cream and oil instead of butter
Main - Asian fish fillets (they consume fish)
Dessert - Bechamel vegan custard as posted above
She also took along some sugared almonds which were quickly devoured!

The trick to using no egg in a sorbet is to use banana or mango which help with the creaminess

Tassie consultants aren't allowed to use raw eggs at demo's and classes and the sorbets still taste delicious. ;).

Interesting - is that government health regs or a directive from HQ?

A government regulation I think. From memory I think it is the result of a huge food poisoning incident in Tassie (non-TMX related). Off mayonaise at a wedding.

Is the oil needed?? What's it for? ???

I am told that you do need some "fat" in it to work. Though I haven't tried it without. It's so quick and simple that you could easily try both before the demo??
Nuts would also add a fat content I imagine???

Oh -ok - I'll just try whatever oil she uses at her place. It just won't be nut oil - her son is allergic to nuts aswell! I am so thankful my kids are not allergic to anything like that.

oh dear! Janine originally suggested to me to use a vegetable oil. I substituted macadamia oil for a nice alternative. So you could use any other vegetable oil instead ;)

Nay-nay - the Chocolate custard in the new My Way of Cooking is vegan if you leave out the optional egg. Might be worth a try?
