This is an adaption of a low carb cake in a cup from Jorge as on Dr Oz. Original recipe had ground flax seeds.I have been making this at my husbands request nearly every night.
Blend 1/4 cup of oats in the Thermomix for 10 secs on speed 10.
Place in a large mug.
Add 1 tsp of baking powder,
1 tsp sugar (optional, I leave it out)
1 tsp coconut oil
1 egg
1 large handful of berries
1 to 2 tbs of yogurt, depending on amount of berries.
You can also add 1 teas vanilla, or 2 teas cinnamon or 2 teas cocoa.
Stir well until mixed.
Cook in microwave for 2 and a half minutes.
We divide it for 2 serves. Usually have it with yogurt.
Aussie Brenda - Just made this for my afternoon snack. I didn't have any yogurt, so I soured some milk, used raspberries and ate it with cream. Well only half of it. It is so easy and nice, what a quick dessert, I probably would use extra sugar for visitors if making with raspberries again. Thanks Elle forgot to mention I didn't have coconut oil and used Macadamia.
Chookie - Thanks for this little treasure ElleG. Made it tonight for DH pud. Ground oats, added everything else. Used 1 heaped dessertspoon of berry jam and no sugar. Did the lot in TMX and tipped into oiled Pyrex 1 cup jug. What a life saver.

I am waiting to have a report back from my twin on this cake. She is a newly diagnosed diabetic and is struggling to eat oats for breakfast. I am still laughing, as she is having cake for breakfast!! ;D

Good to hear you enjoyed it Brenda. From memory the original recipe only has 1 tbs berries and no yogurt. I adapted the recipe so it fed two and more raspberries so I could cut the sugar. it is a forgiving recipe :)

Judy, not for me. DH ate the lot, with cream. Light tea, so enjoyed this. It is a strange little cake. I am going to play around with it. I think marmalade would be nice. Perhaps banana. If making for 2, could put into 2 separate dishes to cook.

I can remember reading JD posting a recipe for a chocolate cake in a mug (http://www.forumthermomix.com/index.php?topic=941.msg5191#msg5191).Albeit not low fat but good to bump the topic ;) ;)

I remember the chocolate cake in a cup. I did cook it, but felt very guilty! This recipe started as a very low carb cake. I used oats as a I cook GF and liked the idea of having minimal sugar and oil and using a healthy flour.
We try and eat very healthly so being able to have a fairly guilt free cake is great. The original fecipe said cook for 50 secs, with the changes it just didnt work, so I increased the cooking time.
Chookie, I am also going to add banana and just see how it works. It seems very adaptable and my DH always loves a treat. It is nice being able to cook, but it is even nicer having someone who appreciates it ;D

Do you by any chance have the original recipe ElleG?
(I control my BS levels using a low carb diet. Oats are far higher in carbs than flax seed and will therefore raise blood sugars higher requiring more meds etc.)

Did everyone grease their cups? Or does the cake come out quite easily by itself?

thankyou very much fundj, I was hoping it would be one that was designed without using artificial sweeteners - the toss up being between high blood sugars and other side-effects, I'm not sure flax is going to be sweet enough with only the cinnamon to lift it but I'll give it a go. :)
