Orange and Currant Biscuits
« on: November 25, 2012, 06:45:29 am »
Orangeand Currant  Biscuits
Ingredients
1 cup currants
1/8 cup of orange liquer eg Grand Marnier
2 cups plain flour
½ teaspoon baking powder
1/8 teaspoon carb soda
½ teaspoon salt
90g unsalted butter
110g sugar
1 large egg
½ teaspoon vanilla extract
1 orange, zested

Preparation
Preheat oven to 1800C
In a small bowl put currants and liquer. Leave to soak until required. Stirring occasionally.
Place butter and sugar into bowl and beat on speed 3 for about 30 seconds.
Add egg and vanilla and beat another 30 seconds.
Scrape down the bowl and add the flour mixture and use  :: to bring it all together.
Add currants and the liquid from the bowl with the zest and  :-: speed 3 until combined. Don't let the currants get squished up.
Roll into small balls and place on a tray lined with baking paper.
Bake 8-12 minutes .

I have based this recipe on one taken from here.

I have changed it quite a lot though. These were a little dry so next time I may put a tiny bit of milk in if it is needed.

May all dairy items in your fridge be of questionable vintage.
