Cheesy vegie muffins

Name of Recipe: Cheesey vegie muffins
Number of People:18 medium muffins
Ingredients:
1 medium zucchini - washed and cut into chunks
1 large carrot - washed and cut into chunks
1 onion - peeled and halved
1 small to medium red or green capsucim - in chunks
1/2 cup corn kernels
3 rashers bacon, or an equivalent amount of ham
1 cup grated cheese (can grate in TMX first)
1 cup SR flour (I used wholemeal)
1/4 cup olive oil
4 eggs
breadcrumbs or cornflake crumbs - about 1/4 cup

Optional:   sliced tomato

Preparation:
Grate the cheese first if using the TMX to grate.  Set aside.
Put the carrot, capsicum and zucchini in the TMX bowl.  Chop 3-4 seconds speed 5.  Set aside.
Dont bother washing the bowl.
Put bacon/ham and onion into TMX bowl.  Chop 3-4 seconds speed 5.  
I lightly fried the ham and onion in a frypan - but you could saute them in the TMX at this point if you like.
Add the chopped vegetables, corn kernels, eggs and oil to the bacon and onion mix.
Stir on reverse, speed 2-3 for 5 seconds.
Add flour and cheese and season with salt and pepper if required.
Mix on reverse, speed 3-4 for 5 seconds, or until well combined.

Put into individual muffin tins.  You can place a slice of tomato on top of each muffin if you like at this point.
Sprinkle with breadcrumbs or cornflake crumbs and optional extra grated cheese.

Bake in a moderate oven 30-40 minutes or until browned.

Tips/Hints:
My mother always used to make a zucchini/vegetable/cheese slice that we got sooooo sick of as kids - especially in zucchini season!  But these little muffins are cute and delicious looking - better than the slice - and really tasty.  
They would be a great addition for a lunchbox.
Vegetarians could omit the ham/bacon.
If you wanted to add a little boost - you could add some sweet chilli sauce into the batter.  My kids just dip the muffins into sweet chilli sauce and suck the sauce off them  >:(
You could also "hide" other types of vegies in these too.

Snoozie - I had no capsicum so put another zucchini in. I like them. Didn't bother with breadcrumbs or extra cheese.

bigTcup - didn't have any zucchini so put a tomato & some broccoli in - yummy.  I over cooked them slightly (I blame DD2 & DS3) but were still edible.  Will make again.

astarra - Just got these out of the oven - they smell divine!! Couldn't resist - delicious! Also didn't put capsicum in - extra zucchini as one of the previous posts said and also didn't put the breadcrumbs and extra cheese on. Oh just realised I didn't put the salt & pepper in either ... wow! Still turned out beautiful and I thank you. These even got a thumbs up from DH!!!!!!!!!!

MJ - These were delicious! I only used 1/4 cup grated cheese and added half a block of crumbled fetta. Yum!

They sound great Karen.  Yes, as kids we did tend to get the same things over and over again, especially when the garden was producing prolific amounts of anything. These days with the internet, a quick google and you have heaps of different recipes to try.

I love savoury muffins but haven't made any for ages. They would be a nice change from the sweet ones.
May all dairy items in your fridge be of questionable vintage.

Made these today. No capsicum so put another zucchini in. I like them. Didn't bother with breadcrumbs or extra cheese lol

Made these today - didn't have any zucchini so put a tomato & some broccoli in - yummy.  I over cooked them slightly (I blame DD2 & DS3) but were still eddible.  Will make again  :)

Just got these out of the oven - they smell devine!! :-* ! Couldn't resist - delicious! Thank you! I was a bit worried how they would turn out (as I got distracted by a daughter announcing she was felling sick,) and had the onion in and chopping with the veg instead of seperate - then everything else got put in without the sauteing stage (distracted again - this time by the said daughter BEING sick)!! Also didn't put capsicum in - extra zuchinni as one of the previous posts said and also didn't put the breadcrumbs and extra cheese on. Oh just realised i didn't put the salt & pepper in either ... wow! Still turned out beautiful and I thank you. These even got a thumbs up from DH!!!!!!!!!!

The recipe is very versatile, and you can chuck in pretty much any vegetables you like.
My kids like olives, so sometimes I even chuck them in too.

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Ran out of ideas, and time to make afternoon tea for boys. Tried this recipe. Was very yummy!

Made it without bacon. Flavours came from carrots, onions, sweet corn and broccoli. Had a sliver of sausage on top of each muffin, just to tantalise fussy DS10

Sounds like a great recipe. Unfortunately DS5 wouldnt be interested in giving this a try because of the flecks of orange and green. I try to hide veggies in meals and he knows they are there so just flatout refuses to try them. DS is a very fussy customer.
