Title: Tomato salsa

Name of Recipe:
TOMATO SALSA


Number of People:...4 - 6

Ingredients:

1 red onion, quartered
1 large red chilli, deseeded
1 teaspoon olive oil
3 large vine tomatoes, quartered
juice and zest of 1 lime
1/2 teaspoon ground cumin
Large handful of coriander leaves
1/2 tsp dried oregano (or 1 tsp fresh)
Large pinch of salt
 

Preparation

Place onion and chilli and olive oil in TMX and chop at speed 5 for about 7 seconds until finely chopped.  Scrape down side of bowl and cook at 100, speed  2 for 4 minutes.

Leave onion mixture to cool and then add the rest of the ingredients and chop at speed 5 for a few seconds until everything is chopped but still chunky.

Put in a bowl and leave for a while so the flavours amalgamate.

Taste and add more salt if necessary.

Thanks Katya, there seems to be lots of cheap tomatoes round at the moment, or better still from the garden.

A word of warning - I mentioned in my Spicey Burgers thread that this didn't really keep well - it went kind of soggy and watery after a few days.  Was still edible but not as nice as it was when freshly made.   I had put it in the fridge in a dish with cling film on the top - maybe it would have been better in an air-tight jar.

Anyhow - let me know what you think if you do make it...
