Title: GF Potato Sponge Cake (also Dairy Free)

750g water
500g peeled potatoes, cut into pieces
4 egg whites
pinch salt
4 egg yolks
400g sugar
50g icing sugar


Place water in  *:, and potatoes in basket. Program 25 mins Temp Varoma speed 1. Keep aside, wash and dry  *: (unless you have 2 like me) ;D ;D ;D ;D
Preheat oven to 180º
Grease a cake tin 30cm diameter, or rectangular 30 x 20cm
Place butterfly in clean dry  *: and add egg whites, pinch salt program 4 mins, speed 3 and 1/2. Place aside too.
Remove butterfly, and without washing  *:, add egg yolks, sugar and potatoes, mix 10 seconds speed 4. Gently fold this mixture into the egg whites. Pour into dish and bake for 30 to 35 mins. Check with a skewer to see if its ready. Leave to cool down a bit before removing from tin, and sprinkle with icing sugar.

Very interesting, cake with no flour!

Lots of sugar though! Am interested to see if its nice! Come on Brazen, get baking!!!!LOL! ;) ;) ;) ;) ;) ;) ;)

I"m very sorry to say this got a thumbs down from everyone (though all but one still ate it lOL)

probably my technique that meant it came out like a very heavy rich cake rather than a light fluffy sponge. it was VERY sweet (i actually skipped the 50g icing sugar too lOL) and the bits that weren't quite cooked (even though i did it in 2 tins) tasted very strongly of potato LOL. (it smelled like potatoes cooking too, ryan asked if we were haivng nuggets and chips for dinner lol)

would love to have someone else try it to see if they get the same result or it's just me!  think it's worth noting in the title that it's dairy free too so will edit bron's first post.

i think i probably overmixed it. i'm hopeless at anything that takes special care lol
