My current fave that we are trotting out around the place is kaffir lime leaves milled with the sugar, tin of coconut cream and a little bit of fruit of choice to add color...though I personally like the creamy white with little green flecks, the color is a lot more sexy at a demo...divine and chefs love it! (For demo purposes I mean...)

Can you believe I've had my TM for about 5 weeks now and I haven't made a sorbet yet :o ;DYou will JulieO, once our weather warms up a bit. I haven't done one all winter either and you need a few people to share it with. I prefer it freshly made - anyone got any clues how to freshen up the frozen leftovers - it sets like ice.

Have you tried heating water, sugar and lemon zest (strips) to get a lemon syrup that you freeze for the ice blocks and then blitzing with fresh pieces of lemon?
What a great idea :-* :-* Easier to fit into spaces in the freezer & make smaller portions too. Love it, now why didn't I think of that myself. Talk about brain freeze, I get it without even eating sorbet ;D ;D ;D ;D
*sigh*Sounds great! That's the beauty of reverse - you can chop to desired consistency, and then mix on reverse. Look forward to your recipe Russell!

Without knowing the mechanics of what will mix & what won't, would something like a Rocky Road sorbet work? Marshmallows, chocolate topping or icemagic and nuts, possibly mix in some condensed milk as well?

well my friend made mango sorbet while we were away and my kids have discovered they LOVE fruit sorbets!!!! (they aren't keen on fruit generally)
since we've been home we've had sorbet every night, yummo!
last night was lemon and orange
tonight was orange and passionfruit (smells utterly heavenly)
can't wait to try some other flavours now so bumping for more ideas!!!

Hi LadiesI have never made banana sorbet, not sure if it would work. You can make instant icecream with frozen bananas though.

Also just wondering if fruit needs to be frozen for sorbet? e.g if you want to make banana or orange sorbet do those fruits need to be frozen? Want to get organised for my first thermie day this week hoping to make my little girl banana sorbet as she doesnt eat the berry one with the frozen berries.
