Title: how do l preserve ginger like the jar stuff

coles today had ginger for $10 kg instead of $25 kg
so has anyone made ginger like the one you buy in a jar

l was thinking like tenina  garlie paste . do you think l could do the same but with ginger

It would need sugar wouldn't it? What does Mr Google say?

I thought the ginger in a jar was preserved in syrup. I guess you'd simmer it in a sugar syrup until it was tender. No doubt chef Google will know.

 Ginger root should be stored in a well-ventilated, dry cupboard or the fridge to prevent any further drying out. Once you've cut your piece of fresh root you can either wrap the end in plastic or peel and chop the whole piece and cover the remnant with sherry. This will preserve it for years – and the ginger-flavoured sherry can be used in cooking.
