One of the biggest difficulties in converting recipes for the Thermomix is converting volume measures of ingredients to weight measures.

This website (http://www.traditionaloven.com/conversions_of_measures/butter_converter.html) has calculators for converting quantities of butter, sugar, flour, oats, honey and rice from pretty much any measure into weight.

Breakfast / Buttermilk Syrup

Name of Recipe: Buttermilk Syrup

Number of People: Enough for 8 servings of pancakes

Ingredients:
  • 320g sugar
  • 190g (3/4 cup) buttermilk
  • 80g butter
  • 1 tsp bicard soda
  • 2 tsp vanilla extract

Preparation:
1. Place sugar, buttermilk, butter and bicarb into Thermomix
2. Cook for 7mins at 100C on speed 4
3. Add vanilla extract

Tips/Hints:
Perfect  for pancakes, waffles or french toast.

Buttermilk syrup has a mild butterscotch flavour and isn't as sweet as maple syrup (much cheaper than maple syrup as well).

Store the leftover syrup in the fridge for up to a few days.

One batch is more than enough to two breakfasts at our four person household.  I usually sterilise a bottle whilst making the syrup and bottle half of the batch for later use.  In the sterilised bottle it should keep for quite a while but once opened I would recommend using it within a couple of days.

Playdough Recipe in  "Everyday Cooking"

The recipe in the book is so easy and produced playdough with an incredibly smooth texture.  The batch size was fine for my kids, but I needed to make 3 lots for our playgroup.  This wasn't a problem though.  I also added the colouring with the flour so I didn't have to knead it in afterwards.

Drinks / Hot Chocolate

Name of Recipe: Hot Chocolate
Number of People: 1-8
Ingredients:

25g Dark Chocolate per person - adjust according to taste and cup size.  Regular dark chocolate is best.
1 cup of milk per person - low fat is better.
Marshmallows

Preparation:
1. Break up chocolate and grate on speed 8 until coarse

2. Add milk

3. Heat to 60C, speed 4 for 4min 30sec (this is enough time to heat 2 cups of milk to 60C - extend time if necessary)

4. In the last 30 seconds, increase the speed to 10 to whip up a good froth (low fat milk makes better froth)

5. Pour into heated cups over top of marshmallows.

Tips/Hints:

We have experimented with including orange zest into the recipe.  Grating it with the chocolate gets a great taste but it is a bit gritty.  Adding pieces of zest with the milk results in small chunks of zest that are too small to scoop out but to big to drink.  Putting it in the strainer basket didn't really work that well. Any suggestions?

Desserts / Frozen Custard

Frozen Custard
Number of People: 4
Recipe:
This one is dead easy.

1. Prepare custard as per the Thermomix recipe.  Plain or chocolate is best.

2. Freeze the custard in cubes

3. Place frozen custard cubes in Thermomix and blend as if making a sorbet.

4. Add your choice of extras (blueberries & choc chips is my favourite) and mix until combined

5. Add a little milk if necessary

6. Serve and enjoy

7. Make some more custard to freeze for tommorrow night  ;D

Harmony - I've done this a few times now. For a really naughty treat, make a double batch (chocolate!) and when cool before freezing, whip in 100g cream, and again after freezing before serving, soooooooo yummy! Don't try adding all the cream after freezing, turns into grainy mess, must add half before freezing.

JD - Funny that this topic has come up this afternoon as I made a batch of EDC custard this morning, let it cool then added 2 x 100g containers of long life cream and a tin of passionfruit syrup.  I'm making it up as I go and when it is ready to whip up in the TMX I am going to add some frozen banana pieces.  Reading Harmony's thread, I will now add a bit more cream when I do this beating later today.   

Update - It is lovely although next time I would strain the passionfruit pulp to eliminate the seeds (I knew I didn't like the seeds so don't know what possessed me to put them all in).  Makes a huge amount of ice-cream and the only thing I don't like about a lot of home-made ice-creams is that they set so darn hard and you have to remember to take them out of the freezer well before time.

photocat - Just had to share, I made this today and mixed in some raspberries to the first lot and some home made chocolate brownie to the second lot. Oh my goodness, it was sooooo good!
