Lemon Layer Squares
Makes 20-25
Ingredients
190g plain flour
1/4 cup icing sugar
125g butter
200g caster sugar
2 eggs
2 tablespoons lemon juice
Method
Make caster sugar and icing sugar according to EDC.
Line a 20cm square tin with paper to come up the sides.
Turn oven to 1800C.
Place flour, icing sugar and butter into bowl. Speed 6. 8 seconds.Press into prepared tin and bake for 20 minutes.
No need to rinse bowl, add sugar, eggs, juice and 2 tablespoon flour extra and whisk. Speed 6/7 10 seconds.
Pour over the warm base and bake for an extra 15-20 minutes.
I cut mine while it was still warm and left to cool.
May be dusted with icing sugar.

Cookie, thanks for this recipe. I just love anything lemon, DH has ordered Chocolate biscuits . Will have to make 2 different lots.

Hi Cookie,
Your lemon squares look great! I would like to try them. They look like there are 3 layers. but you only mention 2 . Is that because the second layer separates (like lemon pudding) ?

Yes Dot. You only put in 2 layers and it separates. It is so very easy.

you wouldn't believe it, I had a Donna Hay recipe for Lemon Squares on my desk all ready to convert :D
The 20cm square tin - do you think I could use my regular slice tin which is rectangle, or the square tin works better?

For this recipe I think the square tin is best as there isn't really all that much mixture. But then an 8 inch square tin has 64 square inches and a slice tin 11 inches by 7 inches is 77 square inches. Not a lot of difference. :P

Mmmmm thanks Cookie1 looks good and something I can do. I tell ya, the TMX has given me confidence to attempt cake-type things which I've never enjoyed making in the past. I've added a 20cm square tin to my shopping list.

I came across this recipe which is very similar to a slice that I have been making for years in my old food processor, so I was keen to try it out. I must admit that I doubled the lemon juice as I had 4 tablespoons in the fridge leftover from dinner last night and added the zest from the lemon, but followed the recipe without any other changes.
The slice I usually make doesn't have the crisp top that this has, and I must say that both are delicious - how can you go wrong with a shortbread base with a lemon curd topping?
Here are the ingredients for my Lemon Cheese Bars (the method is exactly the same as Cookie's)
Base: 125g butter; 1 cup plain flour; and 1/2 cup icing sugar
Lemon curd topping: 2 eggs, 1 cup caster sugar; 1 tablespoon plain flour; 100ml lemon juice; and zest of one lemon

Just wanted to thank you Cookie for this recipe! It is sooooo easy and so scrumptious! I'm addicted to these! :D
Just want to add that I used 4 tablespoons of lemon juice instead of 2.

Miss7 is turning 8 tomorrow and has asked for "something lemony" instead of a cake, and as my lemon tree was given a pruning yesterday I now have alot of lemons on my bench to use (off the branches that were cut off) she couldn't have had a more practical request!!! 8)
Now these are on the to-do list :)

I made these on friday, gone one friday. Used 4 1/2tbs of lemon juice. Delicious especially when warm.
