I halved the recipe and didn't tweak at all other than adding the kidney beans with the tomato paste and herbs and spices, which I wasn't supposed to do! Didn't matter, they didn't break up too much.

I used one heavy based frying pan and two eggs.

Delicious breakfast that's pretty quick, really. It did take me longer because I made the corn tostadas as well. Served with sliced avocado, forgot the sour cream.

We love this.  The sauce is great as a vegetarian nachos and the left over sauce is great for Breakfasts as the Huevos Rancheros.

I added some beef mince to the left overs to use for nacho salad. Yum!

I made this today for the first time. Like MJ I halved the recipe and it worked well.I did find the cooked mixture a little sweet so next time would reduce the sugar a little.Still tasted delicious  :D

we love this also. I make the full quantity and freeze half.
Sometimes I add chopped mushrooms at step 4, I have also added bacon, pre chopped and sautéed with onion. We often have this on a Sunday night for a quick meal with 2 eggs each and a piece of toast to mop up with, so yum!
