Just had a slice of this while it was still warm and it's soooo yummy!!! DD and I might be fighting over it  ;) :D :D :-))

Even though I'm not gluten free this looks fabulous. Please excuse my ignorance but what is guar gum ILB?

Lovemythermo - You have probably looked it up now but guar gum just helps to "combine" the ingredients like the gluten in wheat flour would.

You could easily substitute the GF Plain Flour for normal Plain Flour, use normal baking powder and leave out the guar gum if you wanted "normal" fruit bread.

Miss 4 was so excited this morning. Her appetite has been a bit hit and miss the last few days but she quickly polished off a slice toasted with some butter and then had another slice in her lunch box. She announced at breakfast that it was "delicious" and something about me being the best mummy in the whole wide world .... shucks!  :-[ ;) ;D

Actually Albury - over the border - I am so used to thinking 'NE Vic'. Cheryl is my consultant. I missed the Cindy O'Meara demo - fingers crossed there will be another one soon.

Yes, I know Cheryl!!  She's lovely!  There is a cooking class coming up in October that she has organised for up there. Great to see a class on th border!!

Hopefully the local consultants will get Cyndi booked in again soon. We have 5 consultants in Corowa now and a couple in Albury/Wodonga I believe, so it's ticking along nicely  :)
