Thermomix Recipes for TM5 and TM31 => All In One Meals using the Varoma => Topic started by: cookie1 on January 28, 2011, 12:40:27 am

Here is the original recipe for Baf's Award Winning Chicken and Vegies in the Varoma with all the variations.
500 g of stock
500g potatoes
500g chicken breasts
500g of vegies
100g cream cheese
20g flour
Put say half litre of stock in the TM bowl, (water and stock concentrate if you are making the stock yourself).
Potatoes chopped up in the steamer basket
Chicken breast cut into strips in the Varoma dish (bottom layer), sprinkle with some Herbamore or other seasoning
Vegies on the top layer of the Varoma dish (whatever vegies you like, fill it up!)
Cook potatoes on Varoma temp for 10mins speed 4, then put the Varoma on the top for a further 20mins
If all are cooked, remove Varoma and potatoes, set aside and keep warm.
To the liquid remaining in the TM bowl, add 100g block of Philly cream cheese and about 30g of flour, cook for 2 mins on speed 4, 100C
That then becomes the cheesy sauce to pour over the chicken, vegies and potatoes
These are the variations for this recipe that are within all the posts. Thanks CP63 for compiling them.
This recipe has been adapted to suit the taste buds of our forum members, and some of the variations are:
In TM jug: with Potatoes in Steamer Basket
a) Vermouth, sage or thyme herbs
b) Substitute 100g of stock with wine, 1 clove garlic, 1 onion sautéed in butter
c) honey, mustard, Maggie Beer Verjuice, garlic
d) Substitute Potatoes with 200g dry Pasta shells/macaroni – no need for flour/cornflour (will need to increase stock to 1 litre, if too much at end just reduce on Varoma before adding cream cheese and cornflour)
e) Lemon/Basil Sauce (http://www.forumthermomix.com/index.php?topic=1063.30)
f) Sauté onion & curry powder/paste in TM before adding stock. Reduce stock & thicken with Gravox or rice flour. Saute chilli, ginger and garlic & make a Chinese stock thickening with rice or cornflour.
g) 440g stock, 100g cream cheese, 30g cornflour
h) Saute a diced leek in butter first; add white wine/stock and mustard. Cook 200g macaroni for approx 20 minutes.
i) Substitute cream cheese with goats cheese
j) Dairy free: add some coconut cream and a little more cornflour
k) Tomato, Mushroom & Onion based sauce (http://www.forumthermomix.com/index.php?topic=1063.90)
Diced Chicken in Bottom Varoma: (Spray dish with cooking spray before adding chicken)
a) Marinate Chicken first with 1 tablespoon chilli jam stir fry paste
b) Sprinkle both sides of chicken fillets with Dukkah
c) Sprinkle with Lemon Herb salt
d) Sprinkle thyme on chicken
A little more
I basically pound a piece of chicken (breast or thigh, thighs make nice little ones that don't take that long to cook) then put whatever as the filling, - ham and cheese, spinach and feta, sundried tomato and feta (dd1's 2 favourite things), mushrooms and cheese, tomato and olive etc, roll up and place in foil parcels. Put potatoes or rice in the basket and water in the bowl and the chicken parcels in the varoma. Cook on varoma for 25 mins, adding veg to the varoma with 10 mins to go.

Well this was AMAZING. I added some mustard and white wine to the stock at the beginning but otherwise did it just as the recipe said. It was a huge hit, all my kids ate it, even my super fussy son. I can't believe how easy it is to have a great meal on the table with the thermomix! Thanks for the recipe xx

Well all I can say is....Wow!! I had overlooked this recipe many times not feeling too keen on the idea of a cheesy sauce. But after all the reviews I figured I had to at least try it. Totally delish!!! I did it pretty much straight up without any tweaks (wanted to try the original first) and it was soooo yummy. The kids and hubby loved it and it felt so healthy with all the veg (I used carrot, capsicum, broccoli and mushrooms). It also felt good to be using the varoma. i really don't use it all that much. But I must admit that these all-in-one meals are GREAT!! Can anyone think of any others?? I do my own version of a Chicken and Cashew Stir Fry and also Quirky Jo's Fried Rice. But I'd love to do more!!

Judy yep that's the sort of thing. I made that italian mix once and it was really nice, from memory there was leftovers of the stuffing too!

I can't believe I waited so long to try this!
I made the original version, and it was delicious. I had too many vegies for the varoma tray, so put some in with the chicken. I love making all-in-one meals.
The cheese sauce was the best I have tasted, and I will try making the sauce on its own for cauliflower cheese. It should be even easier than the bechamel sauce with cheese from the EDC that I usually use.
I then used the leftover cream cheese to make the zucchini slice with cream cheese pastry (also from this site, not sure how to post a link). I have never made pastry before, but it was so easy (less than 3 minutes in the machine), and was easy to roll and tasted lovely.

Another variation is to completely swap chicken for fish. This is very good when you cook the fish in whole fillets then dice through the mix. ;)

I'll confess I haven't tried this - in any form - yet. Have no idea why.......just not got around to it. I have a question however - why put the chicken in the larger part of the Varoma & the vegies in the top tray? Don't the veg take longer than the chicken to cook (unless stuffed & rolled perhaps) & wouldn't you get more vegies in if you did it the othe way around.........Or have I completely misread it? I'm looking for some all in one dishes to do a bit of a workshop with & want to put this on the list but need to understand it from all you experienced producers of this award winner. Thanks

Janeezee I don't see why you can't put it all in one and just make a hole through the centre to let the steam through as Jo does with her cashew/chicken/veg dish.
Perhaps it is so that you can see how the chicken is going, but then you would put it on the top shelf. As it is one of our first all in one meals I guess we have all done as Baf suggested. Once you know your machine you could do whatever you thought was the best.

Yeah - you just do it how you do it. I like slipping my tray of vegies on for not as long as meat and have found the top tray holds heaps enough vegies for this dish. It really makes a huge amount especially when you add pasta to it as well. ;)

Well I'm finally going to try this for tonight's tea. I've read through the recipe a few times and thing I am ready to tackle it. Will let you know what we think later. Hopefully I can fit enough in to feed the 7 of us. Oh well if I can't we have sticky date pudding and ice cream for dessert anyway. Does this make a big feed? Faffa have you tried this?

Yep love it Dede just load up the varoma chock a block full with veg ;D I steam chicken on bother layers and then fill them with veg on top ;)

I just made this for the kids - WINNER DINNER!! Three out of Four of them licked their plates clean, the odd one out is in the fussy stage anyway but made a good go of it. Now I'm just waiting for DH to come home so I can eat my serving!! YAY!

OK, this recipe has got me in now ... we're having it for tea tonight - my first all-in-one meal in TM!! (oh, unless you count mushroom rissotto -EDC- with diced chicken in it - so I guess my 2nd!!)

;D ;D ;D ;D ;D - that's our family's response!!!! I sprinkled the chicken with spicy season-all, everything else done exactly to original recipe!! DH & I found it nicer once we added salt and cracked black pepper, but kids all loved it as it was! Top marks and big thank-you for a healthy, quick & easy meal we had no complaints about! DD3 (8mths) was grizzling for more if I wasn't quick enough with the spoon! Yum! Thanx again!

I am making this tonight and it keeps boiling over!! not sure what I am doing wrong?? I have had other recipes boil over on me before as well even when following a recipe exactly as it is in an official thermomix cookbook! Help!! why is stuff boiling over???

Hi Janem. I make this a lot (it will be tonight's dinner) and haven't had a problem.
My suggestions would be to check the seal inside the lid is OK (and that is pressed tightly in so it clicks in all 3 spots), and also double check the amount of water you are adding. You could also try a little less water/stock (400-450g).
Please give it another go as this dish is one of our family favourites (and one of the cook's because it is so quick and easy :)) Hope this helps.
Forgot to add: are your scales working properly? Turn on the scales then put the MC on top of the bowl. It should weigh 30gms (or at least mine does).

This is a regular in our household and has been for months. I pretty much do original post and vary my Vegies (nice with mushrooms). it's also easily converted to Weightwatchers pro points so is a tasty and healthy dinner. Thanks!

I feel like I am completely missing the point on this popular dish . I thought it was ok - but a bit 'school canteen'. On the whole I am not as keen on these types of all in one dishes from the thermomix. All feels too soft and a bit bland. But I am definitely in the minority! Might have been the cream cheese i chose which was half fat? Or maybe just not my type of food.

It's just an ordinary week day meal when you are in a hurry I think bickie. Just add whatever flavours you want to add a bit of zing to the sauce perhaps - chilli, garlic paste, whatever you fancy.

I finally made this tonight after all the rave reviews -and yep LOVED it! I put dukkah on the chicken as per one of the suggestions, because I had a half finished packet in the cupboard, and did the garlic, onion and white wine in the sauce and DH commented 'it tasted like it was from a fancy restaurant'! I don't think he has EVER said that about my cooking before ;D

I don't really like sausages but had some left over from a bbq. chopped them up and added to vegies and sauce with a little sweet chilli sauce that I make, loved it.

Made this for dinner tonight - yum! I rolled my chicken with some bacon and goat's cheese (although I realised afterwards that I probably didn't need any more cheese) and served it with sweet potato and green beans.
My sauce ended up being a lot thicker than some of the other photo's of seen. I don't trust my scales 100% at the moment, although my MC is showing up at about the correct weight (25-30g), so I probably put in too much flour. I've got leftovers so I'll add a bit more stock to it when I warm it up next time.

I don't like steamed chicken so I think that's what has put me off maybe I will try it but cook my chicken first in a pan. Do you think that would work?

Yes I think that would work. I still fry up my chicken the old way for some recipes. I think the brown color it gets gives a bit more flavour to dishes. I have made this recipe and steamed the chicken. Everyone liked it but they didnt rave about it. It is a quick all in one meal.

We,, Halex and Amy, I'll be joining you in making this next week! I've read this thread a couple of times now and I have been meaning to make it...just haven't got around to it yet! I'm not as organised as you guys in doing a menu plan, but I will definitely be cooking it next week...how about tuesday (Cup day!) and then we have someone cooking it nearly every night!
Are there any variations which are people's favourites? I like the sound of the variation with mustard...might have to try that one!

I make a chicken, bacon macaroni cheese and put 3tsp of wholegrain mustard in it and it's delicious so I would say yes

Macaroni is appealing Suzanne but Baf's chicken is not for me.
I am with you in that I don't like steamed chicken.
I always pan fry until golden before using in any dish even my chicken pies.

I don't like steamed chicken either, however I have just made this for the first time. Yes Frozzie!!!! I was a good easy meal. I made it to the original recipe. Next time I will adapt to one of the variations. DH really liked it. I suggest you try it as the timing and use of the Varoma are a useful lesson. baff has this just right.

I'm another one who hasn't made this (not that I remember anyway). I'm actually not a fan of boiled potatoes, they have to be golden brown and crispy for me to eat them.

I've only done this a few times, it's something you can just throw together when you've had a busy day. It's healthy and light and the basic recipe is a little bland but I don't mind it for a change and DH has never complained as it is meat (chicken) with 3 or more vegies and he likes that.
I'd love to know which is the tastiest version of this recipe.

I was initially thinking of making the version with honey mustard etc, but I think I'm now leaning towards the one where you saute a diced leek in butter first; add white wine/stock and mustard. Cook 200g macaroni for approx 20 minutes.
I'd like to try a few variations!
Wonder, you could always make it with pasta instead of potatoes? (I agree, boiled potatoes can be a bit boring...I still like them, but they're no where near as tasty as ones that are golden brown and crispy! :)

I did my variation tonight! Your turn tomorrow night blackwood ;D
What I did:
Preheat oven to 200 degrees.
Prepare varoma - broccoli and cauliflower in dish, fill tray with sliced mushrooms.
500g stock in bowl, 500g mixed potato and sweet potato in steamer basket - 10 mins/varoma/speed 4.
Varoma in position - 20 minutes/varoma/speed 4.
Prepare chicken - cut into strips, coat in egg and chunky breadcrumbs, sprinkle with Morrocan seasoning.
Place in oven, use gut feeling - cooking time will depend on thickness of strips. Mine took about 20 minutes.
Remove steamer basket and varoma from TMX, keep vegetables warm. Tip mushrooms into bowl along with cream cheese and 30g flour. Cook for 8-10 minutes/90 degrees/reverse + speed 3.
Check chicken. If ready, slice into chunks to serve. Arrange on plates with vegetables and drizzle with sauce.

Oh my goodness! Amy, that looks unbelievably good! I have the chicken defrosting in the fridge as we speak...all ready for Baf's chicken tomorrow night! I am so under pressure now...I was planning on doing it pretty much as written and doing "variation h"! - I still feel too new at this to be creative enough to make up my own recipe!!!
I do like your idea if adding the moroccan seasoning to the chicken (I don't have any herbamore - I'll have to looks for that at the shops!) Amy, may I copy your idea of using moroccan seasoning?

That's the one I use CC and we love it. I use it on fish, chicken and lamb in various dishes. I have made some for each of my kids as they really like te flavours too. Much nicer than the pre-packaged ones. :)

Hey team! Well, I made Baf's chicken tonight. YAY!!! It was a big success! Double YAY! :D I didn't get to take a photo of it, due to a crying baby in need of a feed, as well as my poor presentation skills BOO :( (which I am going to need to drastically improve on!)
It was very tasty! I sauted the leek in butter, then added the stock, verjuice and mustard. I coated the chicken in dried tarragon and cooked it in the varoma. I steamed carrot, zucchini and red capsicum. With 8 mins to go, i added the macaroni to the bowl, then added mushrooms with 2 mins to go. I added the cream cheese at the end and then mixed everything together in the thermoserver, with a sliced avocado and some chopped parsley as well.
My 5 year old daughter was very impressed and told me "this is a very special tea mummy!" and followed it up with telling me I am the best cook in the world!!! (hehe...far from it!!!) but oh so cute!
I'll try a few different variations of this meal after I get around to making a few other things off my very long list of things to try!

Seeing as it is Baf's chicken week, I made a new version tonight and served it as a side with sausages. This is what I did:
440g water and 1 pkt French onion soup mix in tmx. Potatoes in basket.
Cook as per recipe, adding varoma with veggies after ten min and cooking for another 20 or until all are tender. Tip potatoes and veg into thermoserve.
Leave soup and water in tmx and add 100g cream and 30g cornflour. Cook as per recipe then pour over vegies.

Hey, that looks great kimmyh! Was it yummy? Did you enjoy it?
I'm keen on trying some different variations...my family loved this! We had some left overs for tea tonight (heated gently on the stove, needed to add some more water, a few extra steamed vegies and some extra cooked macaroni pasta (just to strech it out enough). Still really nice!
I probably enjoyed it even more tonight that last night. I think adding the few extra vegies, pasta and watering it down slightly made the sauce less cheesy and rich, which I preferred.
So, who is cooking this tomorrow night???? ;)

We loved this version tonight Blackwood. Potatoes, cream and French onion soup is something I have cooked in the oven for a few years now. Worked really well with the vegies and good to use varoma as I don't use it enough. So who is next?

Got my thermomix today and this was the first meal I made. It was delicious, especially the sauce. So creamy and extra tasty coz of the stock base. Nommy nommy nommy. Thanks for this awesome recipe. can't wait to try out other stuff!!!

Made this for dinner last night, a regular in our house. I used wine, garlic & onion in the sauce, and added a couple of mushrooms at the end with the cheese & flour - yum!

I have been eyeing this recipe off ever since getting my TMX. Why did it take me so long? It's delicious. I followed a previous variation. I fried off onion and garlic, added 100ml of white wine in lieu of some of the water and just salt and peppered the chicken. A true winner for our household. My 4yo stated 'Mummy, this sauce is delicious....you are a really good cooker.' ☺ Big thumbs up.

Made this for dinner tonight, very simple tasty family dish. My 15 month asked for "more" so 👍 from her. I pretty well stuck to the basic recipe other than using a cream cheese spread I had made for lunch today that had cannellini beans in it (recipe from CC that I adapted as I didn't have feta) so sauce wasn't as cheesy but still good. I can see now how you can adapt this recipe with so many variations.

I made an apricot chicken version of this recipe today. It made 3 small serves.
600g chicken stock
300g chicken breast - cut into 3 flat slices
190g apricot nectar (3/4 cup)
1/4 - 1/2 tsp grated fresh ginger to taste
1.5 tbspns FOSM (http://www.forumthermomix.com/index.php?topic=6744.0)
Carrot slices 2cm thick
Potatoes (whatever size you like roast potatoes but not too large)
sm Cauliflower florets
sm Broccoli florets
1.5 tsps. cornflour mixed with a little water to thicken.
S & P to taste
Place the stock into the TM bowl.
I folded the tenderloin piece back and cut away a bit more of the chicken flesh with it then sliced the remaining piece of fillet into 2 pieces horizontally.
Place the 3 pieces of chicken into an oval shaped casserole dish which will fit into the varoma dish and which has a lid that can be upturned to make another receptacle for the vegies. Sprinkle with the FOSM, pour over the nectar and add the ginger. Set aside.
Place the carrots then the potato into the steaming basket, insert into the TM bowl and cook 8 mins/speed 4/varoma temp.
Place the varoma with the chicken on top and cook for 5 mins/speed 4/varoma temp
Place the cauli & broccoli florets in the upturned lid of the casserole dish and cook a further 8 minutes/speed 4/varoma temp
Remove the potatoes from the steaming basket to score and brown in oil on the stove top and take the cauliflower florets only from the varoma and place in the steaming basket with the carrots, turn the chicken pieces and continue cooking the chicken and vegies for 14 mins/speed 4/varoma temp
Remove the chicken and vegies to the thermosaver whilst you brown the potatoes and make the sauce. Remove all but 80g (1/3 cup) of the chicken steaming liquid from the bowl, add the apricot nectar from the casserole dish and cook for 1 min/100ospeed 4, pouring the slurry of cornflour in through the lid during this time.

I made this dish tonight - wanted something tasty and easy, and remembered this old faithful 😊 I'm doing whole30 though at the moment so I can't have dairy or cornflour, I used a large handful of cashews and some tapioca flour instead. I whizzed up the cashews after throwing them in and it made the sauce yummy and creamy. I didn't fancy coconut cream in the sauce so thought the cashews would produce a similar result. It was so good!!! Going to use this version with lots of variations - love love love this recipe! Thankyou Baf!
