Chicken and Tarragon One-Pot
Ingredients:
2 tbsp tarragon
30ml oil
500g chicken breast or thighs, trimmed and diced
1 onion, quartered
2 garlic cloves
2 large carrots, peeled and diced
1 large zucchini, diced
750ml water
2 chicken stock cubes or equivalent TMX chicken stock concentrate
2 x 10cm peelings orange zest
200g risoni
100g frozen peas
Preparation:
1. Chop tarragon for 5 seconds/speed 8. If necessary, scrape down bowl and chop again. Otherwise, remove and set aside.
2. Add chicken and 15ml oil. Saute for 5 minutes/100 degrees/reverse + soft speed. Remove chicken and set aside.
3. Chop onion and garlic for 10 seconds/speed 6. Add diced carrot and remaining oil. Saute for 2 minutes/100 degrees/reverse + soft speed.
4. Add zucchini and saute for a further 3 minutes/100 degrees/reverse + soft speed.
5. Add water, stock, orange zest, tarragon and seasoning to taste. Heat for 5 minutes/Varoma temperature/reverse + speed 1.
6. Add chicken and cook for 10 minutes/100 degrees/reverse + soft speed.
7. Add risoni and peas and cook for 9 minutes/100 degrees/reverse + soft speed.
8. Pour into thermoserver, remove orange zest and allow to stand for 10-15 minutes to thicken.
Notes:
I converted this recipe from a Healthy Food Guide magazine, with just a couple of tweaks.
My chicken broke up a little bit in the saute process, but it was still in decent chunks at the end of cooking so I was happy with that.
My orange zest also broke up a bit so I had to fish around in the thermoserver after cooking. It might be alright just grated finely and left in the stew. I will probably try that next time.

Delightful Den - I liked it very much but DW not so much. It would seem that she does not like tarragon. I could not get fresh tarragon so I used dried and might have used too much. I think this recipe would work well with turmeric in place of the tarragon.
I used a tablespoon. You listed 2 tbls in your recipe so I probably should have used 2 tsp. I think the normal fresh to dried herb ratio is 3-1.
Suzanne - it was very tasty Dh mmmmm'ed his way through it. It had with lots of sauce to dip our bread into and 2 out of 4 kids ate it so I was happy with that and we will definitely be having it again.

Sounds yummy Amy. Did you use chicken breasts or the thighs?
-
It was very yummy Mandi, and it made the house smell delicious :D
I used breasts but only because that was what we had in the fridge. It would probably be nicer with thighs ;)
-
dede you could add more stock and risoni for your family
-
I was just thinking the same thing Uni ;D
-
;) great minds think alike ;D
-
We are pretty great aren't we :-)) ;D
-
Ok sounds good, just one question though, what is risoni?
-
its pasta that looks like rice dede
-
Will have to look for it, So do I find it near the rice or near the pasta in the supermarket?
-
pasta section dede
barilla is better than the san remo brand
-
I like using risoni, I think its cute :D
I used the san remo because it was on special in WW today :-))
-
Yum Amy that looks delicious, can I ask is tarragon a very strong flavour? I haven't used it before and was hoping it's not too strong for the fussy little people in my life
-

It wasn't strong at all Suzanne, just a nice subtle flavour. The orange zest really adds to it as well, but wasn't overpowering. I was very happy with the balance of the dish :)
-
Thanks Amy :) another for my to-do list which is getting bigger by the day :-))
-

I recommend using it and the fussy little people will have to eat it. You will only create fussy people by catering for them ;)
Don't tell them and they will never know, and certainly don't give them rubbish food before or after to fall back on if they don't eat it.
-
Thanks Amy :) another for my to-do list which is getting bigger by the day :-))
I hope you enjoy it when you try it Suzanne :D
Good luck getting through everything on your to-do list ;)
-
Thanks CP they get what we are having for dinner and if they don't eat it I say I will see you at breakfast, works most of the time and at least I know that they do end up to be good eaters with my 2 older ones eating anything and everything and the fussiness does disappear eventually :)
-
I only buy Barilla. Its the ony dry pasta to buy imho.
H :)
-
I will buy Barilla next time. Eventually I want to get a pasta machine so I can make my own pasta :)
-
Hi Amy we are having this tomorrow night but was just wandering is it fresh or dried tarragon?
Thanks xxx
-
Hi Suzanne, I used fresh tarragon :) I hope you enjoy the dish!
-
I made this tonight. I liked it very much but DW not so much. It would seem that she does not like tarragon. I could not get fresh tarragon so I used dried and might have used too much.
I think this recipe would work well with turmeric in place of the tarragon.
-
Thanks for the feedback Dash. How much of the dried tarragon did you use? Dried herbs are much more concentrated than fresh herbs, so you would only have needed a tiny sprinkle ;)
Turmeric sounds good too! :)
-
I used a tablespoon. You listed 2 tbls in your recipe so I probably should have used 2 tsp. I think the normal fresh to dried herb ratio is 3-1.
I still liked it and would make it agin if DW would eat it.
-
This looks and sounds lovely Amy.
-
I think I'll do some more research on the fresh/dried herb thing ;)
This might have to be a meal you cook when DW goes out Dash :-))
Thank Wonder, it was very yummy, and just as good reheated for lunch the next day :D
-
I love tarragon, will have to give this a try.
-
We had this last night and it was very tasty Dh mmmmm'ed his way through it :), it had with lots of sauce to dip our bread into and 2 out of 4 kids ate it so I was happy with that and we will definitely be having it again
Thanks Amy and had I read the recipe completely before my post above I would have known it was fresh :-)) was having a blonde moment xx
-
Thanks for such a great review Suzanne, I'm really glad most of you enjoyed it! :D
