This is a recipe from Ann Miller and was developed for the Thermomix in Australia Monthly Recipe Competition for December (http://thermorecipes.blogspot.com/2008/12/december-monthly-mouthful-competition.html). Another of her recipes made it to the final Therm-off and so I have been given permission to publish the other recipes that were sent in for the competition.
This recipe is handy when you have some friends arriving unexpectedly and there is some old fruit cake sitting in the pantry.
Cheat’s Christmas Puddings
Ingredients:
250 g fruit cake, broken into chunks
75 g milk
2 eggs
50 g Pedro Ximenez sherry or brandy
1000 g water
Method:
Place all ingredients into TM bowl and mix for 2 minutes on Reverse + speed 3, or until the cake pieces have dissolved into the mixture.
Place the mixture into well greased dariole moulds and place into the Varoma.
Place the water into the TM bowl and position Varoma on lid. Steam puddings for 30 minutes at Varoma temperature on speed 2.
Allow puddings to rest for 10 minutes before unmoulding. Pour a drizzle of sherry or brandy over pudding and then serve with Thermomix custard.

This I will definitely be making. Our next door neighbours brought in heaps of christmas cakes and fruit mince pies and little plum puddings for us. The wife works at the manufacturers of these and they thought we may like them. As we're not really into bought cakes etc I will be able to make these puddings from some of the cake. Thanks.

I made these last year. Wasn't that much fruit in the cake so I added extra which had been soaked in brandy. They were really easy and tasted great.

How many puddings do you get from this quantity?

I guess it depends on the size of the dish you use. From memory I used smallish ones and had about 10 - 12. But then I may have made a double batch. Sorry cooked so many recipes since then I really can't remember.

Have a practise run first then you can eat them twice. ;D
