Hi Green. I live in Cairns too and we are getting some great strawberries at the moment. Try Alan's fruit and veggies at Smithfield outside Woolworths.  He has strawberries straight from the farm in 500gm punnets often cheaper than anywhere else. If you ask you might get last weeks even cheaper. I also ask for a box of cooking tomatoes which they sell to me for between $5 and $8. I do this often on Monday when they are restocking. I then spend the day making tomato everything. His pineapples are to die for and if I happen to get a really ripe one the juice is unbelievable. Enjoy.

Hi Sue and welcome to the forum. I have not cooked pasta on the stove since I have had my TMX. Set it and forget it. Sometimes I wish I had two thermomixes or at least two jugs. Sigh!

I have found with the ice cream that you can use any  old cream. When I see it reduced I have bought low fat, full fat  with or without gelatin. I have used skim milk, full cream or even powdered milk. There is some difference in the texture and flavour but  not enough to worry about. For chocolate ice cream  I have been using Vittoria Dark Chocochino  in the shaker container I bought to use when making cappuccino. It is really a rich chocolate flavour but does have sugar in it so cut down a bit in the amount of sugar in the recipe.  I wonder if you could use a sugar substitute and low fat cream? Just experiment and have fun. You can always find someone to eat the disasters. Someone is sure to tell me it ain't real ice cream I am making but it ain't real ice cream in the supermarkets either and mine tastes better with no additives.!

Oh so happy to have another Yank in the forum. We expect lots of new ideas from you! You will find yourself making your own curry powders and pastes to please your palate. I was born in Syracuse, NY but have lived in Australia  for 45 years so need some reminding about cooking Tex/ Mex food. Aussies love Indian food too so if you need any help jut ask and you will be showered with tips. Thermomixer can cook just about anything and is madly in love with his Bimby and his Bimbettes.  I think his wife bought him a Thermomix to keep him out of her hair. LOL! We love him anyway.

The cream chees you would make at home would not taste like Philly cream cheese but more like Cathy's yoghurt. Be fun to try though.

Oh no, do I need a dehydrator now? LOL!  I think I would like one as I have recently tasted tomatoes dehydrated and they were so powerful to the palate. Please keep us informed Daisygirl.

I think it is just best to "wing it". I  love it when someone just makes it then someone else tweeks it. That is the fun of this forum.

Just do i I say!

Oh Helene I am so pleased you are going to be active on this forum. You will be able to post some of your lovely recipes here.  How about one for fresh salmon steaks  in theVaroma?  We are lucky in Australia to have a very good salmon farming industry in Tasmania not as tasty as wild caught but readily available.

Cheers,
Gretchen
