Title: Slow Cooked Pulled Beef
Post by: judydawn on January 06, 2015, 08:55:40 am
Recipe from The Healthy Food Guide.  Diabetic friendly and freezes well. Can cook in advance and reheat when needed. It makes enough for 6 serves.

1 kg piece chuck steak, trimmed of fat
1 cup of passata
1 tbspn brown sugar
2 tblspns worcestershire sauce
2 tsp paprika
2 garlic cloves, crushed.

Place steak into a small-medium sized slow cooker.
Combine passata, brown sugar, worcestershire sauce, paprika and crushed garlic.
Pour mixture evenly over meat.
Cook on high for 5 hours or on low for 8 - 10 hours or until beef is very tender and flakes easily when tested with a fork.

Transfer to a chopping board, pull into large shreds with 2 forks.

Meanwhile, transfer sauce from the slow cooker to a small saucepan and cook for 10-20 minutes on a medium heat until sauce reduces by half.  Toss beef into the reduction.

Serve in a wrap with salad greens, tomato and a dollop of yoghurt or sour cream.

Make pot pies in individual ramekins (or 1 large one) topped with mashed potato.  I add an extra 1.5 cups of passata to the total recipe once the reduction of the cooking sauce has been done.

Use in tacos

Quesadillas with roasted red capsicum and caramelised onions

Mix with extra passata and serve as a ragout over pasta

Toastie with cheese

Pies in a piemaker

On pizzas

Will try this in bottom oven of Aga.
Have to see what beef I have in freezer, not sure I have chuck, but do have stewing beef bagged.

Be lovely in a submarine roll too!

Judy, what did you put on the top of your pulled beef?  I cant quite work it out from the photo.  Did you pipe on mashed potato and then sprinkle cheese over it?

Thanks for posting the recipe Judy.  I must look in the freezer to see if I have anything suitable for this.

I piped mashed potato Karen then after the photo was taken I put little pieces of butter on top so that it will go nice and brown.  Piping was messy and time consuming,  my nozzle kept popping out but it will look nice when reheated tonight. When I made the individual pots, I just spooned it on.

I found another version here too.

http://addapinch.com/cooking/balsamic-roast-beef-recipe/

This one uses a small joint of beef rather than a slice of chuck.

I haven't looked in the freezer yet!

That looks nice DJ and a piece of beef to roast is easier to find than a slab of chuck steak.  I have to specifically ask for a piece of chuck weighing 1kg, they're normally around 500g. There would be less fat on a bolar roast too. I don't think we can go wrong with any pulled meat recipe, there's certainly a lot out there.

I just used 2 x 500g pieces (as that's what DH bought). I don't think it made a difference.

It went down well here tonight, they were fighting over who was going to have the scraps in the casserole dish.   I just looked at the recipe to show DD and saw that I'd made a mistake with the quantity of passata, it is 1 cup for anyone who has printed the recipe out.  I've altered the recipe.

Good to hear that 2 x 500g pieces works Katie, the supermarkets would probably be cheaper than my local butcher.

I found a piece of steak in the freezer this morning that only weighed 650g and made this without any problem.   I still have to reduce the sauce yet and will do that tomorrow.  I had to sample some and it tastes yum :)

Oh that's good Judy as I was worried it'd dry out in the Aga oven, now it makes sense!

This is a delicious recipe.I used two pieces of beef skirt.
We had part of the pulled beef last night in rolls but tonight the second part was made into pies topped with mash potato.Everybody enjoyed it.Thank you Judy :-* :-*

You never see skirt steak on display here these days but I daresay the butcher would be able to find some if I asked.  I used to cook with skirt steak 40 years ago and enjoyed that cut.  I agree it would be ideal for pulled beef. Glad you enjoyed it Denise.

I made this tonight using the link DJ gave us. I fancied the taste with balsamic. It was lovely. I thickened the juices left in the SC and we had them as gravy.

We had this last night, it was soooooo good, with plenty left over for another meal which will be with mash and peas 😁
Another one which will be made again, I think it would make a brilliant pie also
