Ideas for diabetic friendly treats.

I'm visiting a friend who has just entered palliative care. I want to take a treat but her sugars are through the roof.
Can you help me with ideas?

I was looking at this one earlier. I hope she improves enough to enjoy my baking again but it is ice cream and ice chips for now to sooth her mouth. Maybe I can explore some strawberry sorbets with rapadura.

I posted a recipe for Orange Mousse.  Bit fiddley to make but tasts nice and is from a diabetic cook book.
