Title: Chicken & Vegie Soup

Name of Recipe:Chicken and vegie soup
Number of People: 4+ serves
Ingredients:
1 tblspn oil
1/2 leek, cut into 5cm slices
1 clove garlic
l carrot, cut into chunks
1 zucchini, cut into chunks
1 turnip, cut into chunks
1 stick celery, cut into chunks
100g dry soup mix, rinsed  - I like just plain pearl barley here too. (soak overnight for best results)
1 litre chicken stock
4 large chicken drumsticks, skin removed or chicken thigh fillets can be used
Handful chopped parsley
S & P to taste


Preparation:
Heat the oil in the TM bowl 2 mins/varoma temp/speed 1.
Add vegies and chop for 4 seconds/speed 6. Don't worry if there are still a few chunky bits, they can be chopped later.
Cook 5 mins/varoma temp/reverse/speed 1.
Add stock, dry soup mix and the chicken legs (bone up).
Cook 40mins/100o/reverse/speed 1.
Remove chicken legs, take the meat off the bone and chop into large dice.  Return it to the bowl and continue cooking soup for 15 mins/100o/reverse/speed 1.
Mix parsley through and add S & P to taste.
Suitable to freeze.

Chookie -  Didn't have any chicken legs,  so used thighs with out bones and added them in the last 10 mins.

Cookie - I didn't have any thighs so used a small chicken breast cut up finely. I also used vegetable stock as once more that was all I had. The chicken broke up and shredded and was lovely. The soup has a wonderful flavour.

Ceee -  I tried this one with chicken necks and two legs, used my freshly made (for the first time) vegetable stock concentrate from the EDC and it was lovely, had a really lovely flavour!

CP - tried this again with the leek that I forgot to put in last time. wow! it does make a difference. this soup was even better this time because the last time I chopped the vegies too small and neatly and they were too tiny. I like chunkier better.

earth mumma -  The first time I had a problem with the drumsticks getting caught under the blades.  I get a little worried about my blade as not too long ago they broke so I tried them in the basket with the veggies and soup mix underneath. It worked fine in the basket - although I did have to tip off some of the liquid - which I poured back in when I added the meat back in. I was able to fit 6 drumsticks in the basket nicely.

cathy79 - Lovely, adaptable recipe.  I used different vegies to use up what I had, and what we couldn't eat.  Added cauliflower and used silverbeet stalks instead of celery. Excellent cheap meal - 4 drumsticks fed 4 people!

Merlin - Made this and even my husband who is very fussy about food said it was delicious. Also, fantastic way to use up leftover bits of veggies in fridge. The way I cooked it was with leftover roast chicken. I reduced the overall cooking time as the chicken was obviously  cooked already and I just deboned the chook and took the skin off. I added the chicken after 15 minutes of cooking time and overall used about 30 minutes cooking time to make sure the vegetables and chicken were well cooked through  As I use gluten free pasta I added GF angel hair pasta about 3 minutes before the end of cooking time and the final result was magnificent. Thanks again- I could almost feel the therapeutic benefits of the soup occurring whilst we were all devouring it!

Zan - I made a very similar soup last week. Chopped a clove of garlic, added a small onion and chopped, sauteed, added carrot, celery, zucchini, 1 potato and chopped (just a few seconds, so still some good sized chunks). Added homemade chicken stock, chili flakes, parsley, coriander, soup mix, chicken (cooked shredded). cooked 40 mins, speed 1, reverse, 100 degrees.

KarenH - I used chicken thighs, diced finely and added with 10 minutes left to go.  I also added a can of corn kernels at the end - just because the kids love corn - but they are really yummy in the soup.

maddy - Yum. I used 2 carrots, the whole leek and 650g chopped chicken thighs. I added the chicken in for 15 minutes, like instructed by recipe,  if using the drumsticks. Added in 3Tbsp. of cornflour with water for last 5 minutes of cooking.

Katiej - it was lovely!  Everyone enjoyed it. A great recipe JD, thank you. I was even able to use the turnip I've had for ages, after receiving it in our weekly organic vegie box.  I've not a huge turnip fan and never no what to do with them.

Hally - What a great recipe, really delicious and good for the budget. Made this for my lunches for the week.

JulieO - it's delicious! I used 5 chicken drumsticks as that was what I had in my pack.  They fit in with no problems. Will def add more veg next time as there's enough liquid to handle it. I also added a cube of Umami paste and a sprinkling of chicken stock granules.  Feel like it's done me good.

MF - Loved it and will be a regular in our household. Very tasty.

GF -  little surprised that I had all the ingredients on hand.  Used three chicken thighs and a parsnip instead of a turnip - but it was just a marvellous soup.

CC - Lovely soup, enjoyed by us all.

ES - I made this with pearl barley and chicken thighs. I chopped the chicken into large chunks which largely stayed intact. I hadn't defrosted the chicken before I started, so the chicken didn't cook in the soup as long as the recipe stated, but it was cooked though. I seasoned it with some celery salt and a few dried herbs. Chicken soup was welcome in our family tonight as we have a good dose of winter coughs and colds.

Coles didn't have any leeks today, so then I went to Woollies. Got home starving, and thought I would knock up the soup. Five minutes before it finished cooking I saw the leek still sitting there on the bench  :o :o :o Still tasted delish but I keep wondering if only....   (next time  ;))

Thanks for this healthy and tasty soup JD.    I made it yesterday,  for tea tonight as we were going to be out all day.   Didn't have any chicken legs,  so used thighs with out bones and added them in the last 10 mins.   By the time it had reheated tonight the thighs were cooked to perfection.     The painters will enjoy the rest tomorrow.

DS who has hollow legs and never cooks anything said i need to make double the quantity  :-))

HI JD - thanks for this one.  One of the loveliest things about living where it gets cold in winter is soup - my favourite meals  :D :D :D Made a batch to take over to some friends in need, it was delicious.  Am making another now for our family dinner.  The first time I had a problem with the drumsticks getting caught under the blades.  I get a little worried about my blade as not too long ago the broke  :'( :'( So this time I'm trying them in the basket with the veggies and soup mix underneath. Will let you know how it goes.

I must admit I was a little worried about putting the drumsticks in there too earth mumma but I chose the 4 biggest ones from my pack and had no problems. The basket idea is fine, as long as the total contents of the bowl are kept below the maximum level mark. Of course, you can use any cut of chicken for this recipe as has been proven by some of the reviews above.  I have 6 smaller legs thawing tonight as I am going to make this again tomorrow.

I agree Cathy79 - so economiical, and you can easily utilise what is in the fridge and cupboard.  I didn't have any problems using the drumsticks when I made mine.

The first time I tried this the necks and thighs were in the basket. This weekend I used skinless, boneless thighs and one drumstick and the meat, even though in reverse was turned to threads. I would rather stick to the basket method.

Hi all. I made this about a week ago and absolutely loved it!! I chucked in a large parsnip which probably made it a little sweeter (devine). I was a bit worried about the bone clunking on my blades so I took them out and popped them in the varoma. Worked great. Thanks Judy, this will be a fast favourite of mine (although my girls aged 4 and 1 were not impressed!). Sarah

Wow, this looks yum!!!  will have to do this one next week though as we just had chicken and sweet corn soup yesterday and i am currently doing a Chicken and Choko soup for tomorrow.. so i think i might be souped out for a lil while  ;D

THANKYOU Judy!! I have had my TMX now for probably 3 and a bit weeks and this soup is the first time my husband has genuinely said he has liked anything I have made it. Normally he is always very complementary of my cooking so I have been becoming very discouraged. My eldest son also commented that it was yummy. So thankyou!

That's great news Shazzy, finally.  I think it does take a while to get used to Thermomix food, I know I was like that myself. My Goulash soup is a nice thick soup, men love that one. Have you made the Butter Chicken from the Indian book (it is on the forum too) - DH would have to like that surely, the flavours are lovely.  How about the sausage recipes - all men love sausages.  Keep at it, you will win him over eventually.

I only ever use turnip (and swedes) in soups or casseroles - DH would not be impressed if I served it as a side vegie as he was served them up as a child and hated them. Glad you found a way to use yours Katie.

This is delicious.  I used thigh fillet too as I am not a fan of drumsticks.  I thought the cooking time might be a bit long, but the meat was tender.  I will definately have this one as a family favourite on these cold winter nights!

Hi amanda68, welcome to the forum.  Glad you enjoyed the soup, it does seem a long time to cook the soup but the soup mix really needs that long. It is versatile in that you can use pretty well any cut of chicken although I wouldn't use the fillet.  What else have you been making, have you only just got your TMX? Thanks for this recipe Judy.  Made for a very tasty early dinner last night before heading out.  As we had already eaten the batch of rolls I made earlier in the day (!!!) I soaked some rice stick noodles in boiling water and served the soup over these - made for a delightful and filling meal.  Cheers, Lainie

Will make this tonight to go as an entree before pizza (ds's pizza is plain jane being failsafe and dairy/soy free).

Although, no chicken, and not venturing out in this awful weather, so I am sure I will miss out on that extra chicken flavor, but should still work out fine though!  :D

This was beautiful JD, made a few adjustments for a failsafe version, which my ds adored. First soup he has actually eaten! He loved dipping the bread in, the joys of a 2yo discovering new things  :D

LeeJ, I love 2 year olds and sharing the joys of discovering new foods with them.  I cut up a persimmon for my little almost 3yr old GS the other day to have a try, thinking he wouldn't like it and I would have it all to myself.  Not the case, he ate most of it and then told me I could have a piece too :D  I think when you tell them they won't like something it works  ;)

 :D I think you are right the JD, there are some things he flat out won't have a bar of, for heavens knows what reason most of time. But if Daddy eats it, it's almost a given that ds will  ;) Seems he's picked up his fathers' dis-taste for 'salad' too though   :-)) :-))
It is an adorable age, we are yet to hit 'terrible twos', so enjoying it while it lasts :D

Another winner from JD!  This soup is the best I have ever made.  Was driving everyone at work nuts with my enthusiasm about it!
The kids weren't so keen, but that just means more for me ;)
I don't like bones, so used skinless, defatted thigh fillets... Prob around 1/2 a kg.
Can't eat leeks, so subbed spring onion.
Just lovely and so filling.  I will probably use less chicken next time.

This is just the best soup - have made it so many times now and it's always a winner with everyone - thanks JD!  I usually don't have a leek on hand so just use an onion and use Vege Stock Paste and 800g water instead of chicken stock.  Delicious  :)

I make this soup a lot and use up whatever  cuts of chicken I have eg drumsticks, thigh fillets, breasts, tenderloins etc.  I just vary the cooking time depending in wht the of chicken meat I'm using ie longer for thigh fillets than breast meat etc.I also throw in whatever vegies I have to use up eg corn cobs cut up, broccoli florets etc and the kids seem to eat it no whatever I throw in,especially if I put in some green split peas instead of soup mix.

its a shame that we don't have a "like" system in this forum where if you get a certain amount of likes for a recipe (as in tried and true) that it doesn't get a special something to highlight. This would be one of those Golden recipes.

Second that CP, I don't often make soup as usually the kids are not that keen, but tonight those who tried it just loved it. Will be a regular for us (and it really is a cheap and healthy meal)

I made this earlier today Judy and it's delicious! I used 5 chicken drumsticks as that was what I had in my pack.  They fit in with no problems. Will def add more veg next time as there's enough liquid to handle it. I also added a cube of Umami paste and a sprinkling of chicken stock granules.  Feel like it's done me good.  :D

I've never tried them CC but if you cut them into 2 pieces and discard the tip, it might work.  Would they be too fatty though? You might have to refrigerate the soup overnight so that you could remove the fat once it has set..

Made this soup today as all feeling low with flu virus. We all know the benefits of chicken soup and this one hit the mark for taste and feel good benefits. Loved it and will be a regular in our household. Very tasty :)

Loved your chicken and veggie soup Judy but you also mention your goulash soup. My husband loves goulash soup so can you  please tell me where to find your recipe? My DH could live on soups, curry and casseroles no matter what the weather. I guess that's because we were born and raised in the beautiful Scottish weather.....Lol  ;D

It did, JD - many thanks - also a little surprised that I had all the ingredients on hand.  Used three chicken thighs and a parsnip instead of a turnip - but it was just a marvelous soup.  Will be making more over the weekend - :D  This is the first cold/fluey thing I've had this season, and it's a doosey . .  >:(

I made this on Saturday but we ate it yesterday.Lovely soup Judy, enjoyed by us all. ;D
My pulses need presoaking :-)) and because I was afraid they would harden if cooked in the initial hour so I added a tablespoon chicken stock paste in the final 15 minutes of cooking ;)

Thanks for bumping this Goldfish  I made it for dinner tonight with pearl barley and chicken thighs. I chopped the chicken into large chunks which largely stayed intact. I hadn't defrosted the chicken before I started, so the chicken didn't cook in the soup as long as the recipe stated, but it was cooked though. I seasoned it with some celery salt and a few dried herbs.
Chicken soup was welcome in our family tonight as we have a good dose of winter coughs and colds. To top it off, my fussy DS who is not fond of soup actually enjoyed it and finished his whole bowl.  :) :) :)
There was a little left over, so I have popped in into containers for the freezer so I will have some easy lunches for work.

Chicken soup is perfect for your ailments ES and to hear DS actually ate and enjoyed it was music to my ears.  So many kids won't eat soup and it would be so good for them.

Judy - thanks for this recipe! It's a favourite - but tonight I didn't have turnip, celery so doubled up the zucchini and carrot, used 1 litre of water with 1 Tblsp vegetable stock and red lentils. - a lovely soup yet again and ideal for taking to work tomorrow for lunch! :D
