I thought this tip from Chookie should have a post of its own.
‘I bought a large bag of peeled garlic. I’m mincing it with fresh ginger and spring onion in TMX to form a paste. I freeze this in snack bags to add to stir fries and soups. I use roughly one bunch of spring onions, white part, 1/2 to 3/4 cup of ginger and almost a cup of peeled garlic cloves. Could use 1/2 a brown onion instead of spring onions.

I’m going to make a batch for myself Chookie, a lot of the soups I make seem to be lacking flavour (probably totally my fault due to damaged taste buds) so perhaps this would give them the boost I need. How much would you add to a 4 serve soup recipe please?

Judy, I just break off a piece of the frozen mix. About 2 inches square for about 4 serves. When I make the mix, I put it into a lunch bag and press it flat. Depending on how much I make, I may use several bags. It’s easy to snap off if it’s not too thick.
