Just cut up last weeks hot cross bun with lots of extra raisins for a bread and butter pudding.
Soaking it now with the egg milk and sugar.
Should be good. Hot pudding for fiercely cold day.

With a portion of mince from freezer turned into beef and tomato soup with added tom purée and a tinned of chopped toms, with my French bread.

It was yum Amy

Here is the pudding - makes 3 portions.

One stale hot cross bun bun, two eggs, 1/2 tsp vanilla bean paste, 2 UK Tbsp sugar ( 1.5 Aus T) in measuring jug milk made up to 300 dl. Beat with whisk, pour over sliced and buttered bun arranged in dish with a good handful of large raisins amidst the layers.
Allow to soak at least 30 mins,  I soaked 4 hrs.
Sprinkle with Demerara sugar pop in Oven 195' 25 mins approx or until well risen, slightly golden and set in the middle.
Serve with cream for best effect.



The beef and tomAto soup was good too.
2 portions of cooked mince from freezer or left over mince.
 Add one tin of chopped tomatoes, 1 -2 Tblsp tomato purée, some veg or beef stock concentrate  and 1/2 to 1 cup water ( this depends on how runny your mince is) or use actual stock.
Bring to boil and serve.
Made 3 portions.

It was yummy lunch! Ideal for this bitter weather.

SD had the leftover chicken nuggets and I had salad and leftover tuna pasta bake :)

Potato pinwheels are just mashed potato mixed with onion flakes, grated cheese and diced bacon then spread onto pastry sheets, rolled up and sliced like ... well, like pinwheels! (or Scrolls) then put flat on a baking tray and cooked!! Really yum!  :)

Lunch today was mums noodle casserole (macaroni, bacon, spring onions and Tom soup mixed up with grated cheese on top) a comfort food from when I was a little girl :D

Chicken curry with left over roast chicken today and wholegrain basmati rice. With chocolate and orange mousse from here http://www.forumthermomix.com/index.php?topic=3357.msg274305#msg274305 it  is more mouse than panacotta with hidden fruit.

A friend brought us a lovely curry last week when DH was discharged from hospital. I hope I can make one as good. Curry is not area of expertise for me!!

DJ - I'm sorry - I missed this. Didn't know your DH had been in hospital.  I do hope everything's ok and whatever was the problem was, I hope it's out the door!! wow  . . you could almost write a book on the last 12 or so months!!  Wishing you both all the best - hope spring arrives soon and everything starts to fall into place for you as you would like it!
