Name of Recipe: Asian Broth with Bok Choy and Dumplings
Number of People: 3-4 serves
Ingredients:
1 litre low salt chicken stock
2 star anise
splash of soy sauce
1 bok choy, separate the leaves from the stems. Shred the leaves, set aside for later and slice the stems 1cm thick.
1 cm sliced or grated ginger
1/4 tsp sambal oelek or fresh chilli to taste
A few shakes of sesame oil
3 spring onions, sliced
Sui Mai, Dim Sims or any chinese dumpling (depending on size, 4-5 per person)
Preparation:
Place stock, star anise, soy sauce, bok choy stems & ginger into TMX bowl.
Cook for 10 mins/100o/speed 1/reverse.
Remove star anise.
Add sesame oil, sambal oelek, spring onions, bok choy leaves and dumplings
Simmer 4 mins/100o/speed 1/reverse.
I used some Sui Mai dumplings from the Asian cookbook which I had in the freezer. That recipe is rather bland, see my review here (http://www.forumthermomix.com/index.php?topic=6386.0;topicseen) but they were quite OK in this soup.
This recipe was based on one I found in a UK magazine called Olive - I varied the ingredients to suit what I had on hand. They used kale and small pork meatballs instead of dumplings.

This is great Judy. We often have this for a quick tasty meal. I buy the mini dim- sims in a Kilo bag and I have 4 and DH has 6. good standby meal. You are right in that the broth needs to be tasty. I also garnish with fresh onion tops.
