Rhubarb and Apple Jam

Rhubarb and Apple Jam
Serves
Made 3 1/2 small jars
Ingredients

720g rhubarb cut into pieces. This weight included 2 granny smith apples cut into pieces
360g CSR jam sugar
juice from 1/2 lemon

I simply cut the rhubarb and apple into pieces.  If you wanted smoother jam you could blitz them in the TMX.
Add the sugar and lemon juice and cook for 30 minutes 1000 speed 1.Test to see if the jam is ready. If not give a further 10 minutes varoma speed 1.

This jam is quite tart ( because it is rhubarb I wanted that) so if you wanted sweeter jam I would add more sugar at the beginning.

Tried this yesterday. Used approx 620g combined rhubarb and apple with 500g jam sugar and juice of 1 medium lemon. Great hit with the family. I'd prefer the tangier version originally posted I think as I like the tartness of rhubarb, however, no-one else eats rhubarb in this household - but they love the jam! Great for when I have too much rhubarb growing. I also added a drop of cochineal to pink it up a bit as my rhubarb is quite green even though the stems look pink! Thanks again for the recipe x

Great idea to add the cochineal. My rhubarb is very green in coloour too.

Super delicious jam! a friend gave me some rhubarb and I didnt fancy a crumble.. so I made rhubarb and nashi pear jam.. it is so yummy. I added a little more sugar as I have a sweet tooth!
Thanks for a lovely recipe - will make more tomorrow night with the other half of the rhubarb. I so love making jam!

Thanks for the recipe idea, made Rhubarb, Apple and Ginger Jam and Rhubarb, Apple and Blueberry Jam last night both are delicious

Have just made this jam and it was absolutely delicious; I dropped a handful of strawberries in as well which was nice. Coles Rhubarb was $10.80 per kilo so it was expensive to make but the end result was well worth it. Many thanks for the recipe.
